Pork Stew Provencal

- 3 tbsp olive oil
- 1 large chopped onion
- 4 ‐6 cloves of minced garlic
- 4 pork chops (1‐2 lbs, ½ inches thick)
- 4 tbsp apple butter
- 1 can diced stewed tomatoes (16 oz.)
- 1 tsp salt
- ¾ tsp ground black pepper
- ¾ tsp crushed thyme
- 1 cup Chardonnay
- 5 medium potatoes (peeled and ¾‐inch diced)
- 4 carrots (peeled and cut into small pieces)
- 3 stalks of celery (cut into small pieces)

- 1 tsp. cooking oil
- 1/4 cup chopped onion
- 2 tbsp. flour
- 1 cup skim milk
- 1/3 cup shredded, reduced-fat Swiss cheese
- 1/2 cup low-fat sour cream
- 1 tsp. sugar
- 1/4 tsp. salt
- 1 (16 oz.) package frozen green beans, thawed and drained
- 1 cup herb-seasoned stuffing mix
- 1 tsp. margarine, melted
Millionaire Shortbread

- 2 cups flour
- 1 1/2 cups packed light-brown sugar, divided
- 1 teaspoon salt, divided
- 2 cups cold, unsalted butter, divided
- 1 1/2 teaspoons vanilla, divided
- 1/4 cup light corn syrup
- 1-14 oz. can sweetened condensed milk
- 3/4 pound high quality milk or dark chocolate
Egg-White Omelet with Pico de Gallo

Spray a microwave safe 6 inch plate with olive oil spray for 1 second

- 1 cup egg whites

- 2 oz. reduced-fat cheddar cheese, shredded
- 1/2 cup fresh or store bought pico de gallo or tomato salsa
- 1/2 cup fresh cilantro sprigs
Grilled Hawaiian Chicken Kabobs

In a bowl mix soy sauce, brown sugar, sherry, sesame oil, garlic powder and ground ginger
- 3 tablespoons each, soy sauce, brown sugar, sherry
- 1 tablespoon sesame oil
- 1/4 tsp. each garlic powder, ground ginger
- 1-20 oz. can pineapple chunks, drained
- 8 skinless, boneless chicken breasts, cut into 2 inch pieces
- May add green pepper pieces (optional)
Sweet and Sour Meatballs

Combine hamburger, eggs, cracker crumbs, green pepper, and garlic salt together
- Meatballs:
- 3 lbs lean hamburger
- 3 eggs
- 1 green bell pepper, chopped
- 1 1/2 cups cracker crumbs
- 1 tsp garlic salt or powder
- Oil
- Sauce:
- 2 jars sweet and sour sauce
- 1 large can crushed pineapple
- 3 tb soy sauce
- 1/2 cup brown sugar, packed
- 3 tb cornstarch (more if needed)

- 1 lb hamburger, lean
- 3 cups shredded cabbage
