Mom's Sugar Cookies

Cream sugar and margarine until smooth
- 1 cup sugar
- 1 cup margarine, softened
- 4 eggs, one at a time
- 3 cups flour or until dough is stiff
- 3 tsp baking powder
- 1 tsp vanilla
Black Bean Soup

Soak beans overnight in water to cover, or boil 2 minutes and soak 1 hour, then re-boil
- 1 lb dry black beans
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 stalks celery, diced
- 1 carrot, minced
- bay leaf, fresh thyme, and parsley tied in bouquet

- 1-14 1/2 oz can diced tomatoes
- 1 1/2 cups chicken broth
- 2/3 cup long grain rice (no more than that)
- 1 tsp dried basil
- 1/2 tsp garlic powder

- 2 cups sliced link sausage, cooked (Polska Keibasa or Hot Links)
