Lemon Gooey Bars

Preheat oven to 350 degrees
- 1 box lemon cake mix
- 1/2 cup butter (1 stick), softened
- 1 egg
- 1/2 cup sweetened condensed milk
- 1/2 cup white chocolate chips
Double Chocolate Zucchini Cake

Cream eggs, sugar, buttermilk, oil, and vanilla together
- 2 eggs
- 1 3/4 cups sugar
- 1 cup buttermilk
- 1/2 cup oil
- 1 tsp vanilla
- 4 tbs baking cocoa
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 1/2 cups flour
- 1 small pkg instant vanilla pudding mix
- 2 cups grated zucchini
- 1 cup chocolate chips
- 1/2 cup chopped nuts
Carrot Cake

Cake: Mix sugar, eggs, oil, carrots, and vanilla together
- Cake:
- 2 cups sugar
- 4 eggs
- 1 1/2 cup oil
- 3 small jars baby food carrots
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 small can crushed pineapple, drained
- 1 cup chopped pecans
- Icing:
- 1/2 cup margarine
- 1-8oz pkg cream cheese
- 3 1/2 cups confectioners sugar
- 1 tsp vanilla
- 1 cup chopped walnuts
Chicken Taquitos

Combine first six ingredients, mixing well, and set aside
- 2 cups cooked, shredded chicken
- 1-10 oz can mild enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup onion, minced
- 1-4 oz can green chilies
- 1 tsp garlic salt
- 3/4 cup vegetable oil
- 10-24 flour tortillas
Cranberry Sauce

Place all ingredients in heavy saucepan and cook for 15 minutes
- 1 bag fresh cranberries
- 1 3/4 cups sugar
- 1/4-1/2 tsp salt
- 2 tbs lemon juice
- 1-2 cups water (just enough to cover berries)
Cheesy Vegetable Casserole

Cut cheese into cubes. Place in saucepan with 1/4 cup margarine
- 1/2 lb American cheese
- 1/2 cup margarine
- 1-16 oz bag frozen California Blend vegetables (broccoli, cauliflower, and carrots), thawed and drained
- 1 cup crushed butter crackers
Make-Your-Own Tortillas

Yields 12 six-inch tortillas
- 2 cups masa (corn flour)
- 1 1/2 cups water
Spiced Sweet Potato Mash

Place sweet potatoes in a large saucepan; cover with water
- 2 lbs sweet potatoes, peeled and cubed
- 1 8 0z. package cream cheese, softened
- 1/2 cup 2 percent milk
- 1/4 cup packed brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/2 cup chopped pecans, toasted
Almond Joy Cookies

Preheat oven to 375 degrees F
- 1 cup butter
- 1 1/2 cups white sugar
- 1 1/2 cups brown sugar
- 4 eggs
- 3 teaspoons vanilla
- 4 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 5 cups chocolate chips
- 2 cups sweetened coconut
- 2 cups chopped almonds
Marge's Hash Brown Casserole

THAW THE HASH BROWNS. MIX SOUP, SOUR CREAM, CHEESE AND ONIONS, AND SALT
- 2 LBS FROZEN HASH BROWNS (GRATED OR SQUARE) ALMOST THAWED
- 2 CANS CREAM OF CHICKEN SOUP
- 2 CUPS SOUR CREAM
- 2 CUPS GRATED CHEDDAR CHEESE
- 1/2 CUP CHOPPED ONION OR 1/2 TEASPOON POWDER
- DASH SALT
- 1 STICK OF MARGARINE (OR BUTTER) MELTED
- 2 CUPS SPECIAL K CEREAL (OR CORN FLAKES)
- NOTE: First, it takes 2 lbs frozen Hash Browns....The package is not 2 lbs though....Have to buy a second bag to get to the 2 lbs......or you can use a 2 lb Bag of Southern style (little tiny squares) plain or with onions/peppers, your preference...
