Cinnamon Sugar Pumpkin Muffins

Preheat your oven to 350ºF and line a standard size muffin tin with liners
- Yield: 12
- 1/2 cup coconut flour (Let’s Do Organic)
- 1/2 cup tapioca flour (Ener-g)
- 1/2 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 1 1/2 t ground cinnamon
- 1/2 t freshly grated nutmeg
- 1/2 t ground cloves
- 1/2 c melted butter (or coconut oil or palm shortening)
- 2/3 c sugar (I used plain old white sugar, ha)
- 3 eggs
- 1 c pumpkin puree (not quite a 15 ounce can)
- 1 t vanilla extract
- extra cinnamon and sugar for sprinkling on top
Becky's Roast and Vegetables

Directions Season roast with black pepper and garlic powder
- 1 3 lb. bottom round roast
- Ground black pepper to taste
- Garlic powder to taste
- 1 Tbs. vegetable oil
- 2 10.75 oz. cans condensed cream of mushroom soup
- 1 1 oz. pkg. dry onion soup mix
- 5 carrots, peeled and sliced into 1-inch pieces
- 6 small new potatoes, halved
Hershey Bar Refrigerator Dessert

Directions To make the crust, crush vanilla wafers and mix into the melted butter
- 1 1/3 C. crushed vanilla wafers
- 1/2 C. melted butter.
- 16 marshmallows,
- 3 almond Hershey Bars or 1 large bar
- 1/2 C. milk
- 1 C. whipping cream
Breakfast Green Tea Oatmeal Smoothie

*you need a high speed blender for this Add everything but the ice to the blender and blend for 10 seconds on high

- 1-2 tsp matcha
- 1 cup nondairy milk (unsweetened almond)
- 1/2 frozen banana
- 4 large ice cubes
- raw honey to taste
- heaping 1/4 cup of gluten free oats
Teriyaki Sauce

Easy Teriyaki Sauce In a sauce pan, mix all the ingredients on low heat for about 5-7 minutes
- 1/2 cups soy sauce or tamari. (Please try to buy these organic)
- 1/4 cup + 1 T mirin (Japanese cooking wine)
- 1 1/2 T maple syrup
- 1/4 tsp ginger
- 1/2 tsp garlic
- 1/2 T arrowroot (this is used as a thickening agent.) Teriyaki
No Bake Chocolate Coconut Dream Bars

Start at the top of the ingredients list and add all to a food processor
- Servings: 30
- Preparation Time: 15 minutes
- 20 Medjool dates*
- 2 heaping tablespoons organic peanut butter
- 1 cup unsweetened coconut flakes or shredded
- 1/4 cup raw honey
- 1/2 cup coconut oil
- 2 heaping tablespoons coconut cream concentrate
- 1 cup sliced, toasted almonds
- 1/4 cup chia seeds soaked in 1/2 cup warm almond milk (or warm water)
- 5 tablespoons organic cocoa powder
