Easy Meatloaf*

Directions Mix stuffing, water and egg in mixing bowl
- 2 lb. ground chuck
- 1 pkg. Stuffing Mix, chicken flavor
- 1 egg
- 1 C. water
Egg White Blintz

Whip all ingredients until fluffy and pour into a lightly sprayed non-stick pan
- Filling:
- 4 -6 egg whites
- 1 Tablespoon Splenda and cinnamon mix
- 2 drops vanilla
- 2-3 Tablespoons of low-fat cottage cheese or skim ricotta and 1/3 cup berries.
Cold Weather Soup with Coconut Oil

Bring broth to a boil; add the veggies that need to cook longer
- Servings: 4-6
- Preparation Time: 15 minutes
- 1 quart organic chicken or beef broth
- 1 small red potato, diced
- 2 ribs celery, chopped
- 1/2 large white or yellow onion, chopped
- 2 small carrots, chopped
- Lemon pepper or regular black pepper
- Salt to taste
- Cayenne pepper to taste
- Handful leftover herb salad mix
- 1 small and 1 medium zucchini, diced
- 3 large cloves garlic, minced
- 1 knob fresh ginger (about 1" by 1 1/4"), peeled and minced
- 2 - 4 tablespoons virgin coconut oil
- Juice of 1/2 lemon
Fat Free Strawberry Smoothie

- 7 strawberries
- 1/4 C. nonfat milk
- 3 Tbs. fat free yogurt

Strawberrie Shortcake

Directions Preheat oven to 425 degrees
- 1 1/2 pounds (about 6 cups) fresh strawberries
- 1/4 cup plus 1/3 cup plus 1 tablespoon sugar
- 2 1/2 cups all-purpose flour (spooned and leveled), plus more for dusting
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- Whipped Cream
Cauliflower Bread Sticks

Preheat oven to 350°F. In a large bowl, combine chicken, vegetables, spices beaten egg whites and 2 tsp wing sauce
- 1 head of cauliflower
- 1 tablespoon of oregano
- 1/2 tablespoon of basil
- 1 tablespoon onion powder
- 1/2 tsp red pepper flakes
- 2 eggs
- Salt and pepper to taste
Grain Free Individual Peach Cakes

Preheat oven to 350 degrees
- 4 ripe peaches
- 1/4 cup water
- 8 tsp coconut oil (or butter)
- 1/4 cup coconut flour
- 4 eggs
- 3/4 cup coconut milk beverage
- 1 Tbsp honey
- 1 tsp vanilla
- 1 tsp cinnamon, nutmeg
- Abt 1 cup assorted berries (raspberries, blueberries)
Nacho Cheese

You might have never thought you could make your own healthy nacho cheese at home
- Phase 3
- Makes about 1 1/2 cups
- Prep time: 15 minutes
- Total time: About 3 hours (including soaking time)
- 1 1/2 cups orange or red bell pepper (or a combination)
- 1/2 tsp. garlic, minced
- 1 cup raw cashews, soaked in water at least 2 hours
- 1 tsp. sea salt
- 1/4 cup nutritional yeast
- 1/4 tsp. turmeric powder
- 1/4 tsp. onion powder
- 1/2 tsp. dry mustard
- 1/4 cup canned green chilies
- 1/4 cup olive oil
Kiwifruit & Quinoa Salad

Directions Rinse quinoa under running water for 1 minute
- 1/2 C. quinoa
- 2 ZESPRI green kiwifruit, peeled, quartered and sliced
- 2 ZESPRI gold kiwifruit, peeled, quartered and sliced
- 1 C. red grapes, cut in half
- 1 C. cherry tomatoes
- 1/4 C. red onion, diced
- 2 Tbs. olive oil
- 2 Tbs. red wine vinegar
- 1 Tbs. sugar
- 1/4 tsp. salt
- 1/8 tsp. black pepper, ground
