Loaded Potato Soup

In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp
- Serves 6
- 1 pound bacon, roughly chopped
- 1 medium yellow onion, diced
- 1 large carrot, peeled and diced
- 3/4 cup diced celery
- 4 large Russet potatoes, peeled and diced
- 4 medium red potatoes, diced
- 1/4 cup flour
- 2 cups chicken or vegetable stock
- Coarse salt, freshly ground pepper, to taste
- 4 cups heavy whipping cream
- Optional garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheese
Marshmallow Whipped Cream

- 1 cup of whipping cream
- 1-2 Tbsp powdered sugar (I like it sweet so I use 2 Tbsp)

HEAT oven to 350ºF. LINE 13x9-inch pan with foil; spray with cooking spray
- 1 pkg. (2-layer size) chocolate cake mix
- 1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
- 1/2 cup butter, melted
- 1/2 cup milk
- 6 oz. BAKER'S Semi-Sweet Chocolate, chopped, divided
- 1 cup PLANTERS Dry Roasted Peanuts, divided
- 1 cup PLANTERS Creamy Peanut Butter
Flat Belly Smoothie

SERVINGS: 1 place milk and frozen, unsweetened peaches in blender and blend for 1 minute
- 1 cup skim milk
- 1 cup frozen unsweetened peaches
- 2 tsp cold-pressed organic flaxseed oil (MUFA)
Mushroom Omelet

Directions Spray a small non-stick skillet or omelet pan with cooking spray and heat over high heat for a minute

- 6 ounces fresh wild mushrooms such as shiitake, portobello, chanterelles, etc. or button mushrooms (or a combination of 2 or more kinds), thinly sliced
- 2 scallions, white part only, thinly sliced
- 1/4 teaspoon minced thyme
- 1/4 teaspoon minced basil
- 1 tablespoon chopped fresh flat-leaf parsley
- freshly ground pepper
- 8 ounces liquid egg substitute
- 2 sprigs of fresh flat-leaf parsley for garnish
Better-Than-Potato Salad

Mix cooked lupini beans with the celery, parsley, minced pickles, red onion and eggs
- 4 cups large lupine beans, cooked (see note)
- 2 stalks celery, chopped
- 2 tbsp chopped parsley
- 5 sweet gherkin pickles, minced
- 1/2 cup chopped red onion
- 2 hard cooked eggs, chopped
- 1/2 cup silken tofu
- 2 tbsp cider vinegar
- 1/4 tsp kosher salt
- 1/2 tsp black pepper
Strawberry Salsa P-1

Mix everything together and enjoy as a side
- 3/4 Cup Strawberries / Mango / Peaches, chopped
- 1/2 tomato, chopped
- 2 tablespoons finely diced red onion
- 1/4 Serrano chilli, minced (optional)

- 1/2 teaspoon salt

- 2 tablespoons bread or cracker crumbs
- 2 tablespoons chopped fresh parsley (optional)
- 1 cup tomato sauce
- 2 teaspoons oregano flakes
- For the Soup:
- 1 (28-ounce) can diced tomatoes
- 1/2 medium onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, chopped
- 1 teaspoon oregano flakes
- 3 dashes Worcestershire sauce
- 2 cups tomato sauce
- 1 cup beef broth

- Pinch nutmeg, grated
- 1/2 cup whole wheat flour
- 1 tablespoon sugar
