Directions Thaw meatballs (can thaw in microwave)
- 1 pkg. frozen home-style meatballs
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 8 oz. sour cream
Oil-free Sweet Potato Fudge Cake

To roast the sweet potato: preheat oven to 425F
- Dry ingredients:
- 1 cup all purpose gluten-free flour
- 1/2 cup cocoa powder
- 2 teaspoons gluten-free baking powder or 1 teaspoon regular baking powder
- 1/8 teaspoon sea salt
- Wet ingredients:
- 3/4 cup xylitol or coconut sugar
- 3/4 teaspoon liquid stevia
- 1/2 cup tahini
- 1/3 cup mashed sweet potato
- 1/2 cup + 2 tbsp water
- 2 teaspoons pure vanilla extract
- Add-ins:
- 1/3 cup dark chocolate chips, optional
Salted Nut Roll

- 3 Tablespoons butter
- 1 can Eagle Brand milk
- 1 (10 oz.) package peanut butter chips
- 1 (10 oz.) bag marshmallows

Bacon Avocado-Grilled Cheese Sandwiches

Directions Pre-heat a griddle or non-stick skillet
- 1 lb. bacon, sliced in half, cooked and drained
- 18 slices white or wheat bread
- 1/4 C. butter, softened
- 6 slices american cheese
- 6 slices provolone or swiss cheese
- 2 avocados, peeled, cored and thinly sliced
- 2 tsp. lemon juice
- 2 tsp. salt
- 1 tsp. fresh ground pepper
- 2 tsp. granulated garlic
- 1 1/2 C. shredded lettuce

BLUEBERRY COMPOTE

Blueberries, citrus, and a little vanilla…this is perfect as a sauce, jam, or when warmed, even a syrup
- 5 cups fresh or frozen blueberries
- 1/2 cup Whey Low Granular (regular sugar, if you prefer)
- 1/2 cup Splenda Granular (OR use all Splenda or all WL)
- Zest and juice of one large lemon OR medium orange
- 1/8 teaspoon salt
- 1 1/2 teaspoon vanilla extract
- 2 teaspoons cold butter
No-Bake Luscious Cookies

Directions In a heavy skillet, heat the sugar, syrup, and peanut butter
- 1/2 C. white sugar
- 1/2 C. white syrup
- 1 C. chunk style peanut butter

- 1 cup uncooked quinoa fusilli (Eden Organic Quinoa and Kamut Twists work well)
- 2 1/2 Tbls. olive oil, divided
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 1 cup sliced fresh mushrooms
- 2 Tbls. arrowroot powder
- 2 tsp. tamari
- 2 cups chicken broth
- 1/4 cup safflower mayonnaise
- 2 12-ounce cans tuna, drained
- 1/4 tsp. sea salt
- 1/4 tsp. freshly ground black pepper
- 1 slice sprouted-grain bread, ground into coarse crumbs in the blender or food processor
- Paprika
