- 1 (15.25oz) jar apricot preserves(Polaner

- 1/4 c fat free chicken broth
- 1/4 c honey
- 3 tbs horseradish
- 1 tbs chopped fresh parsley
- 2 tbs Dijon mustard
- 1 tsp chopped fresh thyme
- 1/4 tsp dried crushed red pepper
NEW ORLEANS BREAD PUDDING WITH BOURBON SAUCE

1) to prepare pudding: combine raisins and 2 tbs bourbon in a bowl
- PUDDING:
- 1/4 c raisins
- 2 tbs bourbon
- 1 1/4 c 2% reduced fat milk
- 1/2 c sugar
- 1 tbs vanilla
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- dash of salt
- 3 large eggs, lightly beaten
- 4 1/2 c (1/2 in) cubed French bread (8oz)
- cooking spray
- SAUCE:
- 1/2 c sugar
- 1/4 c light colored corn syrup
- 1/4 c butter
- 1/4 c bourbon

- 1 tsp baking powder
- 1/2 tsp baking soda
