WILD RICE CRAB CAKES

1) bring water to a boil in medium saucepan
- 1 1/2 c water
- 1/2 c uncooked wild rice
- 1 lb lump crab meat, drained,picked
- 3/4 c dry breadcrumbs
- 1/2 c finely chopped red bell pepper
- 1/4 c minced shallots
- 1/4 c light mayonnaise
- 2 tbs Dijon mustard
- 1 1/2 tbs fresh lemon juice
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/8 tsp ground red pepper
- 1/8 tsp black pepper
- 2 large egg whites, lightly beaten
- 4 tsp olive oil, divided

- 1 tsp vanilla
- 3 eggs
- 2 c granulated sugar
- 1 c walnuts
- 2 tsp baking soda
- 1/2 tsp salt
- 1 c vegetable oil
- 2 c grated carrots
- 1 tsp cinnamon
- 1 c pineapple
- 1 c coconut
- topping:
- 1/3 c granulated sugar
- 1/6 c butter
- 1/6 c buttermilk

- 2 tsp lemon zest
- 1 tbs lemon juice
- 1 garlic clove
- 1/2 tsp salt
- 1/4 tsp pepper

- 2 tbs white vinegar
- 2 1/2 tsp minced peeled fresh ginger
- 1 tsp sugar
- 2 tsp fish sauce
- 2 garlic cloves, shopped
- 4 (6oz) salmon steaks (1 inch thick)
- 1/2 tsp salt
- 1/8 tsp black pepper
- cooking spray
- 1/4 c finely chopped fresh basil
- 4 lime wedges
RANCH CHEESE SPREAD

- 3 oz package softened cream cheese
- 1 oz package hidden valley ranch dry dressing mix

- 1 regular-size foil oven bag
- cooking spray
- 2 1/2 c(2inch) diagonally sliced asparagus(about3/4 lb.)
- 1 tbs minced peeled fresh ginger, divided
- 1 tsp dark sesame oil
- 1/4 tsp salt
- 1/4 c sliced green onions
- 3 tbs sake(rice wine)or dry white wine
- 1 tbs miso(soybean paste)
- 1 1/2 tsp sugar
- 1 1/2 tsp lemon juice
- 2 (6oz) salmon fillets(1 inch thick)
- 4 lemon slices
- 2 tsp sesame seeds toasted

- 1 tsp chili powder
- 1 tsp ancho chile powder( or substitute 2tsp regular chili powder)
- 1/2 tsp ground cumin
- 1/2 tsp brown sugar
- 1 tsp kosher or sea salt
- 4 (6oz) salmon fillets
- cooking spray
- 1 tsp maple syrup
