CHEWY COCONUT MACAROONS

1) preheat oven to 350 2) lightly spoon flour into dry measuring cups and level with a knife
- 3/4 c all purpose flour
- 2 1/2 c flaked sweetened coconut
- 1 1/2 tsp vanilla extract
- 1/8 tsp salt
- 1 (14oz) can fat free sweetened condensed milk
GREEK TUNA STEAKS

1) combine first 5 ingredients in a small bowl, and rub evenly over the tuna steaks
- 1 1/2 tsp chopped fresh or 1/2tsp dried oregano
- 1 tsp olive oil
- 3/4 tsp chopped fresh or 1/4tsp dried thyme

- 1/4 tsp black pepper

- 2 c ice cream (vanilla) or yogurt
- 1 c frozen strawberries
- 1 c 1% milk
- 1/2 tsp lime juice
EGGPLANT NOODLE GRATIN

- 1 tbs olive oil
- 4 c coarsely chopped peeled eggplant
- 1 c chopped yellow onion
- 1 c chopped red bell pepper
- 2 c chopped tomato
- 3 garlic cloves, minced
- 3 c hot, cooked medium egg noodles(about 2 2/3c uncooked pasta)
- 1/4 c chopped fresh basil
- 1 tbs balsamic vinegar
- 1 tsp chopped fresh oregano
- 3/4 tsp salt
- 1/4 tsp ground black pepper
- cooking spray
- 2/3 c shredded provolone cheese(about 2 1/2 oz)
MERRY GINGERBREAD COOKIES

- 1 c molasses

CLAM STUFFED MUSHROOMS

- 1 1/2 lbs large fresh mushrooms
- 1 large garlic clove, minced
- 1/2 c butter, melted,divided
- 2 (6 oz)cans chopped clams in juice, undrained
- 1 c Italian seasoned breadcrumbs
- 1/4 c chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
