- 1/4 c tomato sauce
- 2 tbs red wine vinegar
- 1 1/2 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
WHEAT SPAGHETTI WITH HAM AND PEAS

- 3 jalapeño peppers, seeded and coarsely chopped
- 1/3 c coarsely chopped sweet onion
- 1/4 c loosely packed fresh cilantro
- 1 garlic clove,minced
- salt to taste
MANGO CHUTNEY

In a large skillet bring all the ingredients to boil, over medium heat
- 6 firm half-ripe mangoes, peeled and thinly sliced
- 1 cup cider vinegar
- 1 cup packed light brown sugar
- 2 tablespoons minced garlic
- 1 2-inch fresh ginger, peeled and thinly sliced
- 1 tablespoon cayenne pepper salt and freshly ground pepper

TOMATILLO SALSA

1) in blender place tomatillos, jalapeños and water
- 1 lbs tomatillos, husked, washed and cut into quarters
- 2-4 large jalapeño chiles, stemmed, seeded if desired and roughly chopped
- 1/2 c cold water
- 1/2 medium onion, cut in half
- 2 bunches cilantro, stems and leaves
- 2 tsp salt
BARBECUE SAUCE

- 1 (8oz) can tomato sauce
- 2 tbs white vinegar
- 2 tsp chopped fresh parsley
- 1 tsp Worcestershire sauce
- 1 tsp ground mustard
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 1/8 tsp garlic powder
