PINEAPPLE UPSIDE DOWN CAKE

use "flower" bunt pan
- 1 1/2 c cake flour
- 1 1/2 tsp baking powder
- pinch of salt
- 1 stick (4oz) unsalted butter, cut into small pieces
- 3/4 c sugar
- 2 eggs, slightly beaten
- 1/2 c milk
- 1/2 tsp vanilla
- 1 can pineapple rings (5 whole rings & 2 rings cut in half)
- 1 tbs pineapple juice (reserved from canned pineapple)
- 3/4 c brown sugar
- 5 shelled pecan halves
BAKED TORTILLA CHIPS

1) cut tortillas into wedges, spray with nonstick cooking spray and sprinkle with chili powder

FORGOTTEN CLOUDS

1) turn oven to 350. line 2 cookie sheets with foil
- 2 large egg whites
- 2/3 c sugar
- 1/2 tsp vanilla
- 1 small bag of chocolate chips
- 1/2 c walnuts, coarsely chopped
MARBLE BARK, EASY

chocolate bark: prepare marble bark as directed, omitting white chocolate
- 6 squares bakers semi sweet chocolate
- 1 pkg (6 squares) bakers premium white chocolate
- 1 c toasted chopped nuts or bakers angel flake coconut *
- *toast in baking pan in 350 oven 7-10 minutes, stirring frequently.
EGGPLANT, EASY
