- 2 Limes, zest and juice OR 1/4 cup Lime Juice
- 1 tablespoon Extra Virgin Olive Oil
- 2 tablespoons Cilantro Leaves, chopped
- 1/2 Jalapeno Pepper, coarsely chopped (optional)
- 1 Garlic Clove, grated
- Salt & Pepper to taste
Shrimp Risotto with Baby Spinach and Basil

Bring 6 cups broth to simmer in medium saucepan
- 6 cups (about) low-salt chicken broth
- 1 pound uncooked large shrimp, peeled, deveined
- 2 tablespoons olive oil
- 1 ½ cups chopped onion
- 2 large garlic cloves, minced
- 1 1/2 cups arborio rice or medium-grain white rice (about 9 ½ ounces)
- ½ cup dry white wine
- 1 6-ounce package baby spinach leaves
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh basil
- Additional grated Parmesan cheese
Chunky Tomato and Three Pepper Salsa

Blend all ingredients together in large bowl until well combined
- 2 cans (14.5 oz. each) Hunts Diced Tomatoes, undrained
- 1 can (28 oz.) Hunts Crushed Tomatoes
- 1 cup chopped green onions
- 1 cup finely chopped red bell pepper*
- 1 cup finely chopped yellow bell pepper*
- 1 cup finely chopped orange bell pepper*
- 3 large cloves garlic, minced
- 1/2 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Easy Pumpkin Pie

Preheat over to 425 After you have blended all ingredients together, pour into the pie shell
- Filling:
- 1 cup canned pumpkin
- 1/2 cup sugar (or Splenda)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp cloves
- 1 tsp. vanilla
- 1 cup cream (or milk - even skim milk comes out fine)
- 2 eggs
- 9 ” unbaked pie shell or graham cracker crust or your own homemade pie crust recipe. (Wholly Wholesome Organic Whole Wheat Crust Pie Shell is a great tasting premade healthy crust.)
One-Pot Spaghetti Supper

- 1/2 lb. spaghetti
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 1/4 cups pasta sauce
- 6 pitted olives, chopped
- 2 tablespoons capers, drained
- 5 oz. can tuna, chopped
- Salt and Red Pepper Flakes
Lazy Day Crock Pot Lasagna

In a large skillet, brown the beef completely and drain off any remaining fat
- 1 bag of frozen cheese ravioli (25 oz.)
- 1 lb. of ground beef, browned
- 3 cans of crushed tomatoes (14 or 15 oz. each) OR one 42 or 45 oz. can
- 1 tablespoon of Italian Seasoning
- 1 tablespoon of Garlic Salt
- 4 cups of Mozzarella Cheese
- 1/4 cup of Parmesan Cheese (optional)
Sausage and Potato Casserole

- 1 package of skinless smoked sausage
- 4 quartered Yukon Gold Potatoes
- 1 diced green pepper
- 1 diced yellow pepper
- 2 tablespoons butter
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon black pepper
- 2 teaspoons olive oil

Cut up chicken parts into small pieces
- 3 lbs. cut-up chicken parts
- 3 tablespoons Oil, divided
- 4 medium Carrots (2 cups)
- 4 Celery stalks, (2 cups)
- 1 heaping teaspoon Garlic
- Salt and Pepper
- 1 lb.Italian Pitted Green Olives
- 3/4 cup White Vinegar
- 3/4 cup Water
- 1 tablespoon Capers

Combine all ingredients, except meat, bring to a boil, reduce heat, simmer uncovered for 10 to 15 minutes
- 2 cans (15 oz.) white whole kernel corn
- 2 cans (15 oz.) Great Northern Beans, drained and rinsed
- 1 can (10 oz.) Ro-Tel tomatoes and chile peppers, Original
- 2 1/2 cups water
- 1 cup finely chopped onion
- 1 tablespoon lemon or lime juice
- 1 teaspoon ground cumin
- 1 teaspoon lemon pepper
- 1 clove garlic
- 2 cups chopped chicken or turkey
