Firecracker Enchiladas

In a medium saucepan, heat the oil over medium-high heat
- 3 tablespoons vegetable oil
- 1 large onion, finely copped
- 3 tablespoons flour
- One 29-ounce can tomato sauce
- 1 tablespoon chili powder
- 2 1/2 teaspoons ground cumin
- 1 1/2 teaspoons salt
- One 2 pound rotisserie chicken, meat shredded
- 1 pound muenster cheese, grated
- 3 chipotle chiles in adobo sauce, seeded and finely chopped
- 12 6-inch corn tortillas
Chicken Salad

Combine chicken, celery, onions and apple
- 2 cups chicken, cooked, deboned and chopped
- 1 cup celery, finely diced
- 2 Tablespoons minced onions
- 1 Granny Smith apple, chopped
- 1 cup mayonnaise
- 1 teaspoon soy sauce
- 1 teaspoon Worcestershire sauce
- 2 ounces slivered almonds
Sweet Potatoes roasted w/raisins, shallots and pecans

Preheat oven to 350 degrees
- 5 sweet potatoes, peeled and cubed
- 4 Tablespoons olive oil
- 3 Tablespoons balsamic vinegar
- salt and pepper
- 1/2 cup raisins
- 1 cup shallots, finely chopped
- 2 Tablespoons butter
- 1/2 cup pecan pieces
- 1/2 cup maple syrup
Mexican Cornbread

Mix all ingredients together and bake at 425 degrees for 25 minutes in a seasoned skillet or muffin pan
- 1 1/2 to 2 cups self-rising cornmeal
- 1 Tablespoon salt
- 2 eggs
- 1 large yellow onion, chopped
- 3/4 cup jalapeno peppers (Trappey's sliced) chopped
- 2 15 ounce cans of whole kernel corn - drained and rinsed
- 1 1/2 to 2 cups sharp cheddar cheese - shredded
- 1/2 cup oil
- 1 1/2 to 2 cups milk or buttermilk (buttermilk is best)
Spaghetti Sauce and Meatballs

For sauce, place all ingredients in a large pot and cook 30 minutes slowly
- Sauce:
- 5 large cans Italian plum tomaotes or crushed tomatoes (do not drain)
- 1 small can tomato paste
- 1 pack Italian sausage links
- 4 cloves fresh minced garlic
- Oregano (cover tomatoes lightly)
- salt
- pepper
- 1 big carrot
- 3/4 cup grated cheese
- 1 Tbsp. basil
- Meatballs:
- 2 1/2 pounds ground beef
- 1/2 pound pork
- 2 eggs
- 1/2 to 3/4 cup breadcrumbs (start w/1/2 cup)
- 1/2 cup grated Parmesan cheese
- 2 Tbsp. Parsley flakes
- salt
- pepper
- 1 Tbsp. garlic powder

Deviled Egg Salad

Halve hard-cooked eggs lengthwise and place yolks in a small bowl
- 7 hard-cooked eggs*
- 3 Tablespoon salad dressing or mayonnaise
- 1 Tablespoon chopped fresh dill weed
- 1 clove garlic, minced
- 5 dashes bottled hot pepper sauce
- 1/8 teaspoon salt
- 6 cups torn Boston or Bibb lettuce
- 2 cups grape tomatoes or cherry tomatoes, halved
- 1 medium red sweet pepper, chopped
- 4 slices bacon, crisp-cooked, drained and crumbled
- 3 green onions, sliced
- 1 recipe Dill Vinaigrette
- to 1 to 15 - In a large sauce pan, place eggs in a single layer. Add enough cold water to cover eggs by 1 inch. Bring to rapid boiling over high heat. Remove from heat, cover. Let stand 15 minutes; drain. Cool. Peel.

In a large bowl, mix eggs, milk, water, flour, sugar, melted butter and peach juice
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 3/4 cup flour
- 6 tsps. white sugar
- 2 tsps. butter, melted
- 1 oz. peach juice
- 1 (3 ounce) package chocolate instant pudding
- 1 tsp. instant coffee granules
- 3 cups heaving whipping cream
- whipped cream for topping (optional)
- walnuts, chopped for topping (optional)
