Tandoori Monkfish

Serve with raita, basmati rice and an Indian flatbread like naan
- 2 filets monkfish (35 oz/1 kg total), cleaned
- 1 tsp (5 ml) + 1 tbsp (15 ml) tandoori powder
- 1 cup (200 ml) full-fat yogurt
- 1/4 cup (50 ml) vegtable oil
PROVENCALE SEAFOOD STEW WITH HALIBUT,SHRIMP AND MUSSELS

It is interpretation of the bouillabaisse from the south of France
- Roasted red pepper Aioli(Rouille):
- 16 Lg.shrimp,peeled and devined,shells reserved
- 4 cups water or fish stock
- 1 tsp saffron
- 2 tbsp + 1-2 tbsp extra virgin olive oil
- 1 bolb fennel,chopped,fronds reserved for garnish
- 1 Lg.onion,chopped
- 1 Lg.carrot,peeled and chopped + 1 Lg. carrot,peeled and cubed
- 2 stalks celery,chopped
- 1/2 cup tomato paste(100 ml)
- 5 cloves garlic,minced
- red chile flakes,pinch
- 1/2 cup (100ml) Pernod,sambuca,or ouzo
- 1 cup white wine
- 4 cups fish stock
- 2 oranges,zest and juiced
- 4 bay leaves
- 6 springs fresh thyme
- 1 (19 oz./500 ml) can of plum tomatoes,chopped
- 1 Lg. baking potato,peeled and cubed or 12 new potatoes,halved
- 1.10 lbs(500 g)halibut,or other white fish chopped
- 12 medium scallops
- 16 mussels
- salt and pepper,to taste
- Tabasco,butter to taste
- fennel fronds,for garnish
- chives,for garnish
- 1 roasted red pepper,seeded and peeled
- 1 egg
- 1 tsp minced garlic
- 1 tsp lemon juice
- salt and pepper,sugar,Tabasco to taste
- 1 cup olive oil
Blackberries sauce for Buffalo

Combine the blackberries,onion,vinegar,oil,salt,and pepper in a medium bowl
- 2 cups fresh blackberries,or frozen,defrosted at room temperature
- 2 tbsp minced red onion
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/8 tsp salt,pepper to taste
Spanish Rice

Put the oil in a medium-size pot and heat briefly over a medium flame
- 1 tsp oil
- 1/4 cup corn
- 1/4 cup peas
- 1 cup cooked brown rice

Herb Vinaigrette

Add all the ingrediensts except the oil to a blender
- 1 tsp chopped fresh chives
- 1 tsp chopped fresh thyme,stems removed
- 1 tbsp chopped fresh Italian Parsley
- 2 cloves garlic,minced
- 1 tsp Dijon mustard
- 3 tbsp white wine vinegar
- 1 tsp sugar or honey
- salt and pepper ,to taste
- 1 1/2 cup extra virgin olive oil
Ribs Short Braised Ale

If there are any leftovers ribs you can use the meat to make a delicious ragu sauce for pasta
- 3 1/2 lbs beef short ribs cut
- 2-3 inch thick and sliced into pieces wiyh 1 to 2 bones in each
- salt and pepper
- 2 tbsp veg oil
- 2 cups onion,coarsely chopped
- 2 tbsp garlic,coarsely chopped
- 2 tbsp fresh sage,coarsely chopped
