  • 1/2 cup baby carrots+julienned yellow
  • bell pepper
  • 1 cup eggplant cut into half medallions
  • 1 tbsp chopped fresh garlic
  • 1 tsp oil ,salt and pepper

Step 1

Preheat the oven to 350F.Toss the
vegetables in fresh garlic,olive oil,salt and pepper.Place in a baking pan and cover it.Bake 8-12 min.until the vegetables are tender,remove cover
and bake for 5 more minutes
