Spicy Crab Cakes

Ingredients

  • 8 oz crab meat, drained
  • 1 1/2 C fresh white breadcrumbs
  • 2 spring onions, finely chopped
  • 1-2 T chopped fresh dill or parsley
  • 1 egg, lightly beaten
  • 1/4 C mayo
  • 1 T Dijon
  • 1-2 T lemon juice
  • salt
  • 2-3 dashes hot pepper sauce
  • fine dried breadcrumbs, for coating
  • veg oil for frying

Preparation

Step 1

Mix all indgredients except oil and dry crumbs. Form in walnut sized balls. roll in dry crumbs. Flatten to 1/2"

Refredgerate 30 minutes or longer.

Heat 1/2" oil in heavy fry pan until hot but not smoking. Fry about 2 minutes until crisp and golden, turning once.

Serve hot or warm with sauce.
