Oatmeal Cinnamon Muffins

Preheat oven to 400, line muffin tin
- 1 1/4 C flour
- 3 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 3/4 C rolled oats
- 1/2 C brown sugar
- 1 egg
- 1 C milk
- 1/4 C vegetable oil
- 1 1/2 tsp vanilla
Potato & Spinach Phyllo Triangles

Lightly grease a baking sheet with a little butter
- MAYONNAISE:
- 225 grams waxy potatoes, diced fine
- 1 pound baby spinach
- 1 tomato, seeded and chopped
- 1/4 teaspoon chili powder
- 1/2 teaspoon lemon juice
- 225 grams package filo pastry, thawed
- 1 ounce butter, melted
- salt and pepper
- 2/3 cup mayonnaise
- 2 teaspoons lemon juice
- rind of 1 lemon
Couscous with Carrots

In saucepan, bring 1 1/2 cups water to boil; stir in couscous
- 1 cup couscous
- 2 carrots
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon pepper
Veal Scallops with Lemon, Parsley, Garlic

Combine parsley, lemon peel and garlic
- 3 tablespoons minced fresh parsley
- 1 1/2 teaspoons grated lemon peel
- 1 large clove garlic, minced
- 1 1/2 tablespoons butter
- 1/2 pound veal scallops
- 1/3 cup dry vermouth
Chicken and Peanut Pizza

Mix together the peanut butter, lime juice, soy sauce, milk, chili, and garlic in a bowl to form a sauce
- 2 T crunchy peanut butter
- 1 T lime juice
- 1 T soy sauce
- 3 T milk
- 1 red chili, deseeded and chopped
- 1 garlic clove, crushed
- 6 ounces cooked chicken, diced
- 1 pizza dough
- basic tomato sauce
- 4 scallions, trimmed and chopped
- 2 oz Mozzarella cheese, grated
- olive oil, for drizzling
- salt and pepper
Hot Toddy

Toddy Mix: Combine first 7 ingredients in large bowl
- Toddy Mix:
- 1/2 C butter
- 3/4 C brown sugar, packed
- 3/4 C icing sugar
- 2 C vanilla ice cream
- 1 1/2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/8 tsp ground allspice
- Rum, 1 1/2 - 2 oz per mug

- 2 C milk
- 3 T yellow onion, chopped
- 1 bay leaf
- cayenne pepper to taste
- 1/4 C butter
- 3 T flour
- salt to taste
Rocky Road Squares

- 3 cups mini marshmallows
- 2 1/2 cups Rice Krispies®
- 1/2 cup golden corn syrup
- 1 cup semisweet chocolate chips

Roasted Herb Chicken with Lemon Wine Sauce

Run hand under skin of breasts to form packet; insert 8 tarragon or 4 sage leaves into each
- Sauce:
- 8 chicken breasts
- 2 T packed fresh tarragon or 32 sage leaves
- 2 T lemon juice
- 2 T olive oil
- 1/4 tsp salt
- 1/2 C white wine
- 1/4 C lemon juice
- 1 shallot, minced
- 1 clove garlic, minced
- 1/4 tsp each granulated sugar and pepper

- 2 egg yolks
- 1/3 C butter, cubed
