Cajun Halibut with Praline Sauce

Preheat grill to medium-high
- Sauce:
- 1/2 C chopped pecans
- 1 C sugar
- 1/2 C water
- salt
- 1 T unsalted butter
- 1 T dark rum or apple juice
- Fish spice, combine:
- 2 T olive oil
- 1 T paprika
- 2 tsp dried thyme
- 2 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 4 , 6oz halibut pieces
Apple Crumble Cake

In large bowl, mix together flour, conrstarch, sugar and baking owder
- Filling:
- 1 C flour
- 1/2 C cornstarch
- 1/3 C sugar
- 1 tsp baking powder
- 3/4 C butter, softened
- 1 egg, lightly beaten
- 7 C sliced peeled apples
- 2 tsp lemon juice
- 3 T sugar
- 1 T cornstarch
- 1 tsp each cinnamon and allspice
- 3/4 C raisins
- Topping:
- 3/4 C flour
- 1/2 C sugar
- 1/4 C butter
- 2 tsp vanilla
Raspberry Cobbler

Preheat oven to 425F Combine flour, sugar and salt in a medium bowl
- Biscuite Topping:
- 1 C flour
- 1/2 T sugar
- 1/8 tsp salt
- 1/4 lb unsalted butter, chilled and cut into small pieces
- 1 1/2 T ice water
- 2 10oz pkgs unsweetened frozen whole raspberries
- 4 T sugar
- 2 T heavy cream
- Whipped cream (optional)
Candy Cane Martini

Shake well. Pour into glass rimmed with crushed candy canes
- 1 oz vanilla vodka
- 1 1/2 oz white creme de cacao
- 1 oz peppermint schnapps
- ice cubes
- crushed candy canes for rims
Cherry White Chocolate Scones

Line large rimless baking sheet with parchment paper
- 2 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon each baking soda and salt
- 1/2 cup cold butter, cubed
- 1 cup buttermilk
- 1 egg
- 1 cup dried cherries or cranberries, halved
- 3 ounces white chocolate , chopped
- TOPPING
- 2 ounces white chocolate, melted
Salisbury Steak with Savory Sauce

Preheat broiler. Line broiler pan with foil
- 1 pound lean ground beef
- 2 stalks celery, coarsely chopped
- 1 medium onion, coarsely chopped
- 2 cloves garlic, minced
- 2/3 cup fine dry breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1 cup beef broth
- 2 tablespoons tomato paste
- 4 tablespoons chopped chives, for garnish
Caramel Pecan Bars

CRUST: Combine all ingredients in food processor or with electric mixer until blended
- CRUST
- 1 cup butter
- 1/2 cup packed brown sugar
- 3 cups flour
- 1 egg
- FILLING
- 3 cups pecan halves
- 3/4 cup butter
- 1/2 cup liquid honey
- 3/4 cup packed brown sugar
- 1/4 cup whipped cream
Chicken with Rosemary Sauce

Toss chicken in flour; shake off excess
- 4 chicken breast fillets
- flour
- 1 tablespoon oil
- 1 clove garlic, crushed
- 2 teaspoons dried rosemary
- 1/2 teaspoon dried chili flakes
- 1 cup water
- 1/4 cup dry white wine
- 1 chicken stock cube
- 1 tablespoon cornstarch
- 1 tablespoon light soy sauce
Chinese Oven-Barbecued Spareribs

Mix well all the ingredients except ribs
- 2 cloves garlic, crushed
- 3 T dark soy sauce
- 2 T dry sherry
- 1 tsp grated fresh ginger
- 1/2 T brown sugar
- 1/2 T sesame oil
- 1/3 tsp each cinnamon, ginger, ground fennel, anise, and clove (or 1/2 tsp 5 spice powder)
- 1 T hoisin sauce
- Tabasco to taste
- 1 T ketchup
- 2 to 3 lbs pork spareribs

- 1/2 C butter, softened
- 1 C sugar
- 2 eggs
- 1 C mashed ripe bananas
- 2 C flour
- 1 tsp baking soda
- 1/2 tsp baking powder
