Ingredients

    pound lean ground beef

  • 2

    stalks celery, coarsely chopped

  • 1

    medium onion, coarsely chopped

  • 2

    cloves garlic, minced

  • 2/3

    cup fine dry breadcrumbs

  • 1/2

    teaspoon salt

  • 1/4

    teaspoon pepper

  • 2

    tablespoons butter

  • 1

    cup beef broth

  • 2

    tablespoons tomato paste

  • 4

    tablespoons chopped chives, for garnish

Directions

Preheat broiler. Line broiler pan with foil. In medium bowl, combine ground beef, 1/2 celery, onion and garlic, 1/3 cup breadcrumbs, salt and pepper. Divide mixture into 4 equal portions, flatten each into 1/2 inch thick patty. Place on broiler pan. Broil 4 inches from heat for 5 minutes. Turn; broil until browned, about 7 minutes. Meanwhile, in medium skillet, heat butter over medium-high heat until melted. Add remaining celery, onion and garlic; cook until onion is slightly softened, about 2 minutes. Stir in beef broth, tomato paste and remaining 1/3 cup breadcrumbs. Bring to a boil. Reduce heat to medium-low; cover and simmer 5 minutes. Serve patties topped with vegetable sauce and chopped chives.
