Salisbury Steak with Savory Sauce

Ingredients
- 1 pound lean ground beef
- 2 stalks celery, coarsely chopped
- 1 medium onion, coarsely chopped
- 2 cloves garlic, minced
- 2/3 cup fine dry breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1 cup beef broth
- 2 tablespoons tomato paste
- 4 tablespoons chopped chives, for garnish

Preheat broiler. Line broiler pan with foil.
In medium bowl, combine ground beef, 1/2 celery, onion and garlic, 1/3 cup breadcrumbs, salt and pepper. Divide mixture into 4 equal portions, flatten each into 1/2 inch thick patty.
Place on broiler pan. Broil 4 inches from heat for 5 minutes. Turn; broil until browned, about 7 minutes.
Meanwhile, in medium skillet, heat butter over medium-high heat until melted. Add remaining celery, onion and garlic; cook until onion is slightly softened, about 2 minutes.
Stir in beef broth, tomato paste and remaining 1/3 cup breadcrumbs. Bring to a boil. Reduce heat to medium-low; cover and simmer 5 minutes. Serve patties topped with vegetable sauce and chopped chives.
