Almond Apricot Squares

IN small saucepan, combine apricots with enough water to cover
- 3/4 cup packed dried apricots
- 1/4 cup butter
- 1 cup all-purpose flour
- 3/4 cup sugar
- 2 tablespoons 1% plain yogurt
- 2 eggs
- pinch salt
- 1/2 cup slivered almonds
Chicken with Peaches and Basil

In shallow dish, combine flour and half each of the salt and pepper
- 3 tablespoons all-purpose flour
- 1/2 teaspoon each salt and pepper
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 ripe peaches
- 1 small onion, chopped
- 1 clove garlic, minced
- 3/4 cup chicken stock
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh basil
Apple Coffee Cake

Combine flour, sugar, baking powder and slat in large bowl
- Topping:
- 1 1/3 C flour
- 3/4 C sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1/4 C butter
- 1 egg, beaten
- 3/4 C milk
- 1 tsp vanilla
- 2 cooking apples, peeled and sliced
- 1/3 C brown sugar
- 1/2 tsp cinnamon
Denver Omelet Pie

In a large bowl, beat the eggs, onion powder, thyme, salt and pepper
- 6 eggs
- 1/2 tsp onin powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/8 tsp pepper
- 3 C frozen shredded hash brown potatoes
- 1 C shredded Swiss cheese
- 1/2 C diced fully cooked ham
- 1/2 C chopped green pepper
- 1 medium tomato, thinly sliced

- 1/2 lb small-curd cottage cheese, drained

My Favourite Carrot Bran Muffins

Mix first 7 ingredients in large bowl
- 1 1/2 C flour (excellent with half whole wheat)
- 3/4 C brown sugar
- 3/4 C natural bran
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp slat
- 1 tsp cinnamon
- 2 eggs
- 1/2 C cooking oil
- 1 C grated carrot
- 1 C crushed pineapple juice

Roast Beef Tenderloin with Sauce

Sprinkle tenderloin with peppercorns and salt, pressing to adhere
- SAUCE:
- 4 pounds beef tenderloin premium oven roast
- 3 tablespoons black peppercorns, coarsely chopped
- 1 teaspoon salt
- 3 tablespoons olive oil
- 4 tablespoons butter
- 2 cups sliced shallots
- 1 teaspoon sugar
- 3 cloves garlic, minced
- 1 tablespoon minced fresh thyme
- 3 1/4 cups beef stock
- 1/2 cup dry red wine
- 1/4 cup brandy
- 1 bay leaf
- 2 tablespoons cornstarch

Preheat oven to 375. Mix the flour, pepper and paprika together and dredge the chicken breasts with it
- 2 tablespoons whole wheat flour
- 1/2 teaspoon pepper
- 1/4 teaspoon paprika

- 1/2 cup low sodium chicken broth
- 1 cup 100% concord grape juice
- 2 tablespoons dijon mustard

- 4 sprigs savory, optional
