Apricot Sour Cream Scones

Preheat oven to 400. Mix first 5 ingredients in a large bowl
- 2 cups flour
- 1/4 cup packed golden brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 5 tablespoons chilled unsalted butter
- 2/3 cup sour cream
- 1 teaspoon vanilla
- 1/2 cup chopped dried apricots, or other dried fruit
- 1 large egg, beaten
Pasta with Almonds and Cream

Preheat oven to 350F. Put almonds on a baking sheet and bake until light golden
- 3 oz blanched almonds
- 1/4 C butter
- 2 garlic cloves, minced
- 1 C chicken broth
- 2 C whipping cream
- salt and white pepper to taste
- 1 lb penne or pasta shells
- 8 to 10 fresh balsil leaves, finely shredded or 2 T chopped fresh parsley
- 1/2 C freshly grated Parmesan cheese
Chicken Satay with Peanut Sauce

Sprinkle chicken skewers with sesame seeds before grilling
- Peanut Sauce:
- 1 pound chicken breast, , cubed
- PROCESS UNTIL SMOOTH: then marinade chicken for at least 4 hours
- 6 tablespoons vegetable oil
- 4 tablespoons light soy sauce
- 4 tablespoons fresh lime juice
- 1/2 inch piece fresh ginger, peeled and chopped
- 3 cloves garlic
- 2 tablespoons light brown sugar
- 1 teaspoon chinese-style chili sauce or 1 small red chili pepper seeded and chopped
- 2 tablespoons fresh chopped coriander
- 2 tablespoons smooth peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon sesame or vegetable oil
- 2 spring onions, chopped
- 2 cloves garlic
- 2 tablespoons fresh lime juice
- 1 tablespoon brown sugar
Oriental Beef

Place meat in slow cooker
- 1 1/2 pounds beef steak, cut into thin strips
- 1 tablespoon beef bouillon powder
- 2 cups hot water
- 1/2 teaspoon liquid gravy browner
- 3 tablespoons soy sauce
- 1/4 teaspoon ground ginger
- 2 tablespoons cornstarch
- 2 tablespoons water
- 6 ounces frozen pea pods, thawed
- 1 handful bean sprouts
Garlic Chicken

Trim fat from chicken and cut in thirds
- 1 kg chicken thigh fillets
- 1 T paprika
- 2 T olive oil
- 8 cloves garlic, unpeeled
- 1/4 C brandy
- 1/2 C chicken stock
- 1 bay leaf
- 2 T chopped fresh flat-leaf parsley
Orange Cachew Rice

Bring orange juice to a boil
- 3 C orange juice
- 1 1/4 C long grain rice
- 1 1/2 T butter
- 2 T sugar
- 2 T orange peel zest
- 1/2 C unsalted cashew chunks
Bran Muffins

In large bowl combine flour, baking powder, soda salt and raisins
- 1 C flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp slat
- 3/4 C raisins
- 1 C buttermilk
- 1 C natural bran
- 1/3 C cooking oil
- 3 T molasses
- 1 egg
- 1/4 C brown sugar
- 1/2 tsp vanilla
Best Ever Biscuits

Stir together flour, baking powder, sugar, cream of tartar, and salt
- 2 cups flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/2 cup butter
- 2/3 cup milk
Thai Goodness Pizza

Roll out and press dough in greased pizza pan
- 1 pizza crust dough
- 1/4 C smooth peanut butter
- 3 T reserved pineapple juice
- 1 T soy sauce
- 2 tsp lemon juice
- 2 tsp cooking oil
- 1 tsp liquid honey
- 1 tsp miced fresh gingerroot
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cayenne pepper
- 1 T cooking oil
- 1 red pepper, slivered
- 1 small red onion, slivered
- 1/2 lb boneless, skinless chicken breast halves, diced
- 1/2 C grated mozzarella cheese
- 1/2 x10oz frozen pea pods, thawed and blotted dry (or fresh, blanched)
- 1/2 C pineapple tidbits, drained (reserved)
- 3/4 C mozzarella
Turkey and Bacon Chowder

Cook bacon in large saucepan o medium until crisp
- 5 bacon slices, diced
- 1/2 lb lean ground turkey
- 2 1/2 C sliced fresh white mushrooms
- 1/2 C chopped onion
- 1/2 C chopped celery
- 1/4 C finely chopped green onion
- 1/4 C diced red pepper
- 5 C turkey or chicken stock
- 3 C chopped unpeeled red potato
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1/2 C frozen kernel corn
- 1/4 C all-purpose flour
- 3/4 C skim evaporated milk
- 1 T Dijon mustard
