Instant Pot / Slow Cooker Carnitas

Cut up your pork into 5 or 6 even pieces
- 8 lbs Bone in Pork Shoulder/Butt
- 1 Red Onion (Chopped)
- 2 tsp Minced Garlic
- 3 dashes Red Pepper Flakes
- 1 tsp Ground Cumin
- 1 tsp Ground Cinnamon
- 2 tsp Salt
- 2 tsp Ground Pepper
- 2 tsp Oregano
- 2 tsp Bay Leaves (or 2 Bay Leaves)
- 3 cups Orange Juice
- ½ Lime
- 1 cup Chicken Broth
Honey-Mustard Chicken

Preheat oven to 375 deg. Line roasting pan with foil
- 1/4 cup Dijon-style mustard
- 2 Tbsp honey
- 2 Tbsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1-1/2 Tbsp chopped fresh parsley
- 1-1/2 tsp chopped fresh tarragon or 1/2 tsp dried tarragon
- 4 chicken breast halves (8oz each)
Ranch Chicken Salad BLTs

- 1/3 cup greek yogurt
- 1/4 cup mayonnaise
- 2 teaspoons chopped fresh thyme
- 1 small clove garlic, finely grated
- 1 pound shredded roast chicken
- 1/2 pound bacon, cooked and chopped

- 4 onion rolls, halved and lightly toasted

Spicy Chicken Thighs with Sweet & Tangy Honey Glaze

Set an oven rack in the top position and preheat the broiler
- For the Chicken
- 1-1/2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 1-1/4 teaspoons salt
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon smoked paprika
- 1/4 - 1/2 teaspoon cayenne pepper, to taste
- 8 boneless, skinless chicken thighs, trimmed
- For the Honey-Vinegar Glaze
- 6 tablespoons honey
- 2 teaspoons + 2 tablespoons cider vinegar, divided
Red and White Chili

Place slow cooker liner inside slow cooker bowl
- 6 cups cubed cooked chicken or turkey
- 2 cans (15.5oz) navy beans, drained
- 1 cup chicken broth (I used whole can)
- 1 lg onion, chopped
- 1 lg red bell pepper, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 2 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp dried oregano leaves
- 1/2 tsp each salt and cayenne pepper
Potato Pancakes

Place potatoes in colander and rinse
- 3 russet potatoes, peeled & coarsley shredded (about 3 cups)
- 1 small yellow onion, grated (about 1/2 cup)
- 1 Tbsp all-purpose flour
- 2 Tbsp chopped fresh parsley
- 1 large egg
- 1 egg white
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp unsalted butter, divided
- Nonfat plain yogurt or unsweetened applesauce
Weeknight Pepper Steak

Mix gravy mix, water, soy sauce and peppers until well blended
- 1 pkg McCormick Brown Gravy Mix
- 3/4 cup cold water
- 1 Tbsp soy sauce
- 1/4 tsp ground red pepper
- 1 Tbsp vegetable oil
- 1 lb boneless beef sirloin or flank steak, cut into thin strips
- 1 small onion, cut into thin wedges
- 1 med green or red bell pepper (or 1/2 of each), cut into thin strips
4-Pepper Deviled Eggs

Slice the eggs in half from top to bottom
- 6 hard boiled eggs, cooled & peeled
- 1 tsp whole pink peppercorns, divided
- 1/2 tsp whole white peppercorns
- 1/2 tsp whole black peppercorns
- 1/2 tsp whole green peppercorns
- 1/2 tsp caper liquid
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1/4 tsp kosher salt
- Pinch sugar
Cheesy Tater Tot Breakfast Bake Recipe

In a very large skillet, cook sausage on medium high heat, breaking up the meat and browning it
- 4 slices bacon, cooked and crumbled
- 1 lb ground breakfast sausage, no casings
- 2 1/2 cups sharp cheddar cheese, shredded, divided
- 2 cups whole milk
- 2 extra large eggs or 3 large eggs
- 1/2 tsp freshly ground black pepper
- 1/2 tsp onion powder
- pinch of table salt (1/8 tsp)
- 2 lbs frozen tater tots
- 3 TB freshly chopped parsley for garnish
