Buffalo Chicken Burgers with Blue Cheese Dressing

Preheat outdoor grill for med-high heat, and lightly oil the grate
- Sauce:
- 1/4 cup light sour cream
- 1/4 cup reduced fat blue cheese crumbles
- 1/4 tsp Worcestershire sauce
- Burgers:
- 1-1/2 lbs ground chicken
- 1/4 cup hot pepper sauce
- 1/2 tsp celery salt
- 1/4 tsp poultry seasoning
- 1/2 tsp paprika
- 1 pinch cayenne pepper, or to taste
- 1 Tbsp hot pepper sauce
- 4 kaiser rolls, split
- 4 leaves iceburg lettuce (optional)
- 1/2 cup diced celery (optional)
Bob Evans Breakfast Link Bake

Preheat oven to 375 deg. Grease bottom and sides of a 13x9" baking dish with vegetable oil
- 1 pkg (20oz) Bob Evans Refrigerated Hash Brown potatoes
- 1 to 2 Tbsp vegetable oil
- 1 tsp salt
- 1/4 tsp black pepper
- 10 large eggs
- 3/4 cups milk
- 1/2 tsp baking powder
- 1/4 to 1/2 cup diced onion
- 1 pkg (12oz) Bob Evans Original Sausage links (lightly browned)
- 1/4 tsp parsley, chopped
- 1-1/2 to 2 cups shredded Colby Jack or mild Cheddar cheese
Frozen Lemonade with Coconut Rum

Place ice, concentrate, and rum in a blender; blend until slushy
- 1 1/2 cups ice cubes, crushed
- 3 T frozen lemonade concentrate
- 2 T coconut rum (such as Malibu)

Thai-style Spicy Chicken and Peanut Noodles

To prepare the pasta, place it in a large skillet and cover with about 4 C water and season with kosher salt
- For Serving:

- 1/2 C favorite creamy peanut butter
- 3 Tbsp seasoned or unseasoned rice vinegar
- 3 Tbsp reduced sodium soy sauce or tamari
- 2 tsp sesame oil, optional
- 1 1/2 tsp light brown sugar
- 1 tsp grated fresh ginger or sambel oelek (Asian chili sauce) to taste
- 1 Tbsp vegetable oil
- 1 1/2 C chicken (breast or thigh meat), cut into bite-size pieces
- 1 sm red bell pepper, sliced
- 1 C zucchini slices
- Fresh chopped cilantro
- 2 green onions, sliced
- 2 Tbsp chopped unsalted roasted peanuts or cashews
Scallops Seared with Lemon Orzo
