Mary Bott Beans

Brown hamburger with onion; drain
- 1 1/2 lb hamburger
- 1 onion, chopped
- 28 oz can pork & beans
- 1 can kidney beans, slightly drained
- 1 can green baby lima beans, drained
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/3 cup ketchup
- 1 Tbsp vinegar
- 1 tsp salt
- 1 Tbsp yellow mustard
- 1 lb bacon, drained & crumbled
Black Forest Cake

Drain cherries, reserving 1/2 cup juice
- 2 - 20oz cans tart pitted cherries, undrained
- 1 c granulated sugar
- 1/4 c cornstarch
- 2 - 9 " chocolate cake layers, baked and cooled
- 3 cups cole whipping cream
- 1/3 cup confectioners' sugar
Cheese-Stuffed Chicken Breasts

Preheat oven to 450 deg. Spray a baking dish with vegetable cooking spray
- Stuffing:
- 4 skinless, boneless chicken breast halves
- 1 Tbsp olive oil
- 1/2 cup shredded part-skim mozzarella cheese
- 4 Tbsp chopped fresh basil, divided
- 2 Tbsp nonfat cream cheese, softened
- 2 Tbsp grated Romano cheese
- 1 Tbsp fresh lemon juice
- 1 clove garlic, minced
- 1 tsp anchovy paste
- 1/8 tsp freshly ground black pepper
Wild Mushroom Tartlets

Heat oven to 350. In 10-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat
- 2 tablespoons olive oil
- 1 shallot, finely chopped (2 tablespoons)
- 1 (4 oz.) package fresh wild mushroom medley, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon chopped fresh rosemary leaves
- 2 tablespoons dry sherry
- 1/4 cup ricotta cheese
- 1/4 cup crumbled chevre (goat) cheese (1 oz.)
- 1 (1.9 oz.) package frozen mini fill shells I(15 sheets)
- 1/3 cup shredded Parmesan cheese

Preheat ovent to 325 deg. Grease and flour 13 x 9 x 2" baking pan
- 2 cups flour
- 4 tsp baking powder
- 1/2 tsp salt
- 2 sticks unsalted butter, melted
- 2 cups brown sugar
- 4 eggs
- 1/2 cup bourbon whiskey
- 1/4 cup water
- 1 6oz pkg chocolate chips
- 1 cup chopped pecans
- Hot Buttered Whiskey Glaze
- 1/4 cup butter
- 2 cups confectioner's sugar
- 1/3 cup bourbon whiskey
- 1 tsp vanilla
Chile Cheese Casserole

- 4 cups baked tortilla chips, 2 1/2 ounces
- 6 egg whites
- 4 large eggs
- 1/4 cup skim milk
- 3/4 tsp ancho chili powder
- 1/8 tsp freshly ground black pepper
- 1 (4-oz) can mild chopped green chiles
- 1 Tbsp chopped fresh cilantro leaves, plus whole leaves for garnish
- 1/2 cup shredded sharp Cheddar cheese, about 2 ounces
- 1/2 cup shredded pepper jack cheese, about 2 ounces
- 1/2 cup prepared green salsa verde
- Reduced-fat sour cream, optional

- 1 small red onion, finely chopped
- 2 jalapeno chiles, finely chopped
- 2 Tbsp fresh lime juice
- 1/4 cup finely chopped fresh cilantro leaves
- salt and freshly ground black pepper

- 1/2 1/2 1/2 lb fresh asparagus spears, trimmed

- 1 cup water
- 1/4 cup sugar
- 3/4 cup vodka
- 1 cup apple juice
- 1 cup apple liqueur (such as Sour Apple Pucker)

Shepherd's Pie (Penzeys Spices)

Preheat oven to 400 deg. Boil the potatoes in salted water for about 20 minutes or until tender
- 1 1/2 lb potatoes, peeled & quartered (Yukon gold)
- 2 Tbsp olive oil
- 2 lbs ground lamb (or half lamb / half beef)
- 2 Tbsp fresh rosemary (or 2 tsp cracked rosemary)
- 1 Tbsp fresh thyme (or 1 tsp dried thyme)
- 4 cloves garlic, minced
- 1/4 - 1/2 tsp salt, to taste
- 2 med carrots, peeled & sliced
- 1 lg onion, peeled & chopped
- 1 Tbsp balsamic vinegar
- 6 oz tomato paste
- 2 C chicken stock
- 1/4 C heavy cream

- 2 egg yolks
