- 1 frozen puff pastry sheet (17.3-oz/397-g pkg), thawed (see Cook’s Tip)

Buttermilk Fried Chicken

- 2 cups buttermilk
- Salt
- Vegetable oil, for frying
- 1 cup self-rising flour
- 1/2 tsp sweet paprika
- Freshly ground pepper

Twice-Baked Potato Casserole

Cut baked potatoes into 1" cubes
- 6 medium unpeeled potatoes, baked
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 lb sliced bacon, cooked and crumbled
- 3 cups (24oz) sour cream
- 2 cups (8oz) shredded mozzarella cheese
- 2 cups (8oz) shredded cheddar cheese
- 2 green onions, chopped

Filet of Beef Cordon Bleu-Style

- 4 filets of beef, about 10 oz each, choice grade or above
- Salt and pepper to taste
- 3 Tbsp neutral cooking oil
- 2 bunches asparagus, extra large, ends trimmed
- 2 Tbsp extra virgin olive oil
- 6 Tbsp whole butter
- 10 sprigs of thyme
- 1/4 lb prosciutto di Parma, thinly sliced
- 4-8 slices Swiss cheese or Gruyere
- 3 cups whipped potatoes, for 2/3 cup per serving (Note: Make them stiffer and place in plastic piping bag)

- 24 Slices of deli honey ham
- 6 Slices of swiss cheese, cut into fourths

Black Forest Stuffed Cupcakes

- 1 (8oz) pkg cream cheese, softened
- 1 egg
- 2 Tbsp sugar
- 1 (20oz) can cherry pie filling, divided
- 1-1/2 cups thawed Cool Whip Whipped Topping
Blueberry-Peach Crisp

Preheat oven to 375 deg. Spray a square 8x8x2" baking dish with nonstick cooking spray
