- 1/4 cup chopped green onions
- 3 cloves garlic, minced
- 4 cups reduced-sodium chicken broth
- 1/2 tsp ground cumin
- 2 cans (15oz ea) black beans, drained and rinsed
- 2 Tbsp chopped parsley
- 3 Tbsp lime juice
- 1/8 tsp hot red pepper sauce

Spicy Pork Stir-Fry

"This is Sichuan-style pork stir-fry
- Marinade:
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 poundpork tenderloin, cubed
- 1 lime,juiced
- 1 tablespoon soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon cornstarch
- 3 teaspoons dark sesame oil
- 1 tablespoon peanut oil
- 3 teaspoons minced fresh ginger root
- 2 green chile peppers, chopped
- 1/2 cup julienned carrots
- 1/2 cup sugar snap peas, julienned

Creamy Tomato-Basil Chicken and Pasta

Cook pasta as directed. Heat 2 Tbsp dressing in large skillet on med heat
- 3 cups penne pasta, uncooked
- 1/4 cup sun-dried tomato dressing, divided
- 4 small boneless skinless chicken breasts (1 lb)
- 1 cup fat-free reduced-sodium chicken broth
- 1/2 tsp each garlic powder & black pepper
- 4 oz neufchatel cheese, cubed
- 2 cups grape tomatoes
- 1/2 cup shredded parmesan cheese
- 8 fresh basil leaves, cut into strips
Guinness Chocolate Cake

Preheat oven to 350° and grease and line with parchment paper a 9-inch springform pan
- Cake:
- 1 cup Guinness
- 1/2 cup plus 2 tablespoons butter
- 1/2 cup cocoa
- 2 cups superfine sugar (berry sugar, dissolving sugar)

- 2 eggs
- 1 tablespoon vanilla extract
