Mix the ingredients in a bowl
- 1 lb fresh cooked crab meat
- 1/2 cup mayonnaise
- 2 Tbsp lemon juice
- 3 Tbsp sour cream
- Salt and pepper
- Cayenne pepper to taste
Michigan Blueberry & Peach Cobbler

Preheat oven to 375 deg. Lightly grease or spray an 8x8" baking dish
- Streusel:
- 6 Tbsp butter
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Filling:
- 1 lb blueberries
- 1 lb fresh peaches, pitted & sliced into thin wedges
- 1/3 cup Michigan sugar
- 3 Tbsp cornstarch
Double Chocolate Mousse Cake

- 1 (8oz) pkg semisweet chocolate squares, chopped
- 2 cups butter (4 sticks)
- 1 cup sugar

- 3 Tbsp milk

Shaker Chicken and Noodle Soup

Combine 1 cup broth, vermouth and butter in small saucepan
- 13 cups chicken broth, divided
- 1/4 cup dry vermouth
- 1/4 cup butter or margarine
- 1 cup heavy cream
- 1 pkg (12oz) frozen or dry egg noodles
- 1-1/2 cups water
- 3/4 cup all-purpose flour
- 2 cups diced cooked chicken
- Salt and pepper to taste
- 1/4 cup finely chopped parsley (optional)
Slow Cooker Balsamic Chicken

1. Pour olive oil and garlic in the bottom of a 6-qt slow cooker
- 1 tablespoon. olive oil
- 4 cloves garlic, minced
- 1 pound baby carrots
- 8 boneless, skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 cup balsamic vinegar
- 1 onion, sliced
- 1 pound green beans
- Fresh chopped parsley for garnish
Spicy Chicken Quesadillas

Make spicy appetizers or a light meal with leftover chicken, tomato, shredded cheese and flour tortillas
- 2 cups chopped cooked chicken
- 1-1/2 cups shredded cheddar cheese
- 1 cup chopped tomato
- 2 green onions, finely chopped (optional)
- 1-1/2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic salt
- 1/2 tsp oregano leaves
- 8 flour tortillas 8"
- Paprika (optional)
Turkey Burgers

- 1 1/4 lb ground turkey
- 1/2 cup reduced fat ricotta or cottage cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp Worcestershire sauce
- 2 tsp Dijon mustard
- Vegetable oil for grill grates
- 4 burger buns
- Toppings such as lettuce, red onion slices, and tomato slices, if desired.
Orange-Glazed Cornish Hens (Free Press recipe)

Pat the hens dry. Season the cavity and the entire hens with salt and pepper to taste
- 2 Cornish hens, thawed and giblets removed
- Salt and pepper to taste
- 1 tsp Chinese five-spice powder
- 3/4 cup orange marmalade or apricot preserves
- 1 generous Tbsp Dijon mustard
- 1/4 cup orange juice
- 1/4 cup less-sodium, fat-free chicken broth
- Vegetable oil cooking spray
