American Macaroni Salad

- 2 cups dry elbow macaroni, cooked, rinsed, and drained
- 1/3 cup diced celery
- 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
- 1 Tbsp minced flat-leaf parsley
- 1/2 cup diced vine-ripened tomato (optional)
- 1/2 cup prepared mayonnaise
- 3/4 tsp dry mustard
- 1 1/2 tsp sugar
- 1 1/2 Tbsp cider vinegar

Margarita Chicken & Rice Skillet

HEAT 2 Tbsp. dressing in large nonstick skillet on medium-high heat
- 1/2 cup KRAFT Zesty Lime Vinaigrette Dressing, divided
- 1 cut-up broiler-fryer chicken (3-1/2 lb.)
- 1 red pepper, chopped
- 1 onion, chopped
- 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
- 1-1/2 cups long-grain white rice, uncooked
- 1/2 tsp. ground cumin
- 2 Tbsp. chopped fresh cilantro

1. Combine the minced garlic with olive oil, lemon juice, salt, and pepper in a bowl

- 2 Tbsp butter or margarine
- 1/2 cup diced red bell pepper
- 3 Tbsp green onions, sliced
- 1 cup uncooked long grain white rice
- 1/2 tsp dried thyme
- 2 cups chicken broth
- 2 - 4.5 oz jars sliced mushrooms, drained

- ■ 2 1/2 to 3 pounds Yukon gold or red-skinned potatoes, peeled and sliced 1⁄3-inch thick

- 1 1/2 tablespoons whole grain mustard
- 1/2 teaspoon garlic powder
- kosher salt and freshly ground pepper, to taste
