Shepherd's Pie

Heat oven to 425 deg. Place carrots and onion wedges in baking dish; toss with olive oil, salt, pepper and herbs
- 3 carrots, cut into 1 or 2" pieces
- 1 onion, half diced and half cut in rough wedges
- 2 Tbsp olive oil
- Salt, pepper and dried Italian herbs, to taste
- 1 lb ground beef
- 1 garlic clove, minced
- 1-1/4 cups beef broth
- 1 tsp cornstarch
- 1 Tbsp Worcestershire sauce
- 1/4 tsp cayenne pepper
- 1/2 tsp thyme
- 1 cup frozen peas
- 3 cups mashed potatoes (ready-made, leftover, instant)

- 1 1/2 cups half-and-half
- 1 1/2 tsp cornstarch
- Sugar to taste
- 3 oz fine-quality dark chocolate, chopped or grated
- A shot of peppermint schnapps or espresso (optional)
Alton's Good Eats Meatloaf

- For the glaze:
- 6 ounces garlic-flavored croutons
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- 1/2 onion, roughly chopped
- 1 carrot, peeled and broken
- 3 whole cloves garlic
- 1/2 red bell pepper
- 18 ounces ground chuck
- 18 ounces ground sirloin
- 1 1/2 teaspoon kosher salt
- 1 egg
- 1/2 cup catsup
- 1 teaspoon ground cumin
- Dash Worcestershire sauce
- Dash hot pepper sauce
- 1 tablespoon honey

- 2 cups cooked chicken, torn or cut into bite-size pieces
- 2/3 cup ranch dressing, divided
- 1 12" prepared pizza crust
- 6 slices bacon, cooked crisp, crumbled
- 1/4 cup sliced green onion (optional)
- 3 cups (12oz) shredded pizza double cheese or 2 cups mozzarella plus 1 cup cheddar cheese
