Stuffed & Grilled Jalapenos

Preheat the grill to medium-high heat or preheat the broiler
- 10 large jalapeno peppers, rinsed
- 1 lb medium or hot pork sausage
- 12 oz 1/3 less fat cream cheese, softened
- 1/2 cup shredded Mexican-style cheese or Monterey Jack cheese
- 1/4 cup chopped fresh cilantro, optional
- 1/2 tsp garlic powder
- 1 Tbsp favorite chili powder
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 10 slices bacon, slightly cooked but still pliable, each cut in half
Seafood Fettucini

Melt butter, stir in flour
- 2 Tbsp butter or margarine
- 4 tsp flour
- 1-1/2 cup half-and-half
- 1/4 cup grated Parmesan cheese
- 1 pkg Louis Kemp crab delights
- 6 oz cooked fettucini
- 1 Tbsp fresh parsley, chopped
Benedict Potatoes

Heat oven to 350 deg. Peel and boil potatoes
- 10 lg red potatoes
- stick of butter
- 1 tsp salt
- 1/4 tsp pepper
- 1 Tbsp grated onion
- 1 cup scalded milk
- 8 oz cream cheese
Honey Garlic Chicken Thighs

Preheat oven to 375. In a bowl with tight fitting lid, put the flour
- 8 boneless skinless, chicken thighs
- 1 ⁄4 cup flour
- 1 ⁄4 cup honey
- 2 tablespoons soy sauce
- 4 garlic cloves, minced
- 1 ⁄2 teaspoon salt
- 1 ⁄2 teaspoon pepper
Oven Roasted Potatoes

Preheat oven to 375 deg. In a bowl combine all the ingredients, stirring in potatoes to evenly coat
- tsp each of the following:
- 1/8 cup olive oil
- 1 Tbsp minced garlic
- dried basil
- dried marjoram
- dried dill weed
- dried thyme
- dried oregano
- dried parsley
- crushed red pepper flakes
- salt
- 4 large potatoes, peeled & cubed
Turkey Chili with White Beans

In large skillet over med-high heat, heat olive oil and cook onions, stirring, until tender
- Toppings:
- 4 Tbsp olive oil
- 3 lg yellow onions, chopped
- 3 lbs ground dark turkey meat
- 4 - 6 Tbsp chili powder, to taste
- 2-1/2 tsp dried oregano
- 2-1/2 tsp ground cumin
- 2 bay leaves
- 2 Tbsp unsweetened cocoa powder
- 1/2 tsp ground cinnamon
- 2 28oz cans whole tomatoes, undrained
- 2 28oz cans tomato sauce
- 6 cups beef broth
- 6 15oz cans small white beans or cannellini beans (or a combination), rinsed & drained
- salt to taste
- chopped red onion
- chopped fresh cilantro
- shredded Monterey Jack cheese
- sour cream
Cheesy Cheddar Roll-Ups

In a skillet, saute onion in oil until light golden brown; cool slightly
- 1 small onion, thinly sliced
- 1 Tbsp olive oil
- 1 8oz pkg refrigerated crescent rolls
- 2 Tbsp coarse ground mustard
- 1 pkg (16oz) cheddar sausage
Classic Macaroni Salad

Combine the pasta and vegetables in a large bowl
- 1 lb whole-wheat elbow macaroni, boiled until tender in heavily salted water, drained, rinsed in cold water, and drained again
- 1 1/2 cups coarsely grated carrots (about 2 large)
- 1 cup diced celery (about 2 stalks)
- 1 fat scallion, sliced in half lengthwise and slivered
- 1 cup Hellman's or Best Foods mayonnaise
- 1/4 cup white vinegar
- 1/2 cup sugar
- 1 Tbsp hotdog relish
- 1 Tbsp yellow mustard
- 3 tsp kosher salt (or half as much table salt)
- Freshly ground black pepper
- 2 Tbsp finely chopped parsley
Upside Down Chocolate Cherry Cake

Grease a 9 x 13" pan and spread the pie filling evenly in the bottom
- 1 21 oz can cherry pie filling
- 2 1/4 cups all-purpose flour
- 1 1/2 cups white sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- 1 1/2 cups water
- 1/2 cup vegetable oil
- 1/4 cup distilled white vinegar
- 1/2 tsp vanilla extract
Apple-Pear Crumble Pie

Preheat oven to 375. Mix wafer crumbs, brown sugar and butter until well blended; set aside

- 1/4 1/4 1/4 c (1/2 stick) butter, melted
- 1 1 1 ready-to-use refrigerated pie crust
- 2 2 2 large baking apples, peeled, sliced
- 1 1 1 large pear, peeled, sliced
- 1/3 1/3 1/3 c granulated sugar
- 1/4 1/4 1/4 c flour
- 1/2 1/2 1/2 tsp ground cinnamon (or ground ginger)
