1. Preheat oven to 390 deg
- 1/2 sheet puff pastry
- 3 Tbsp butter
- 4 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 oz crumbled soft goat cheese
- handful finely chopped fresh parsley
Devil's Curry

In a food processor, blend the spice paste ingredients until thick and smooth
- Spice Paste:
- 8 shallots, chopped
- 5 garlic cloves
- 3 ” knob of ginger
- 3 stems of lemongrass, white part only, thinly sliced
- 30 dried red chilies
- 1/4 cup of oil
- 2 Tbsp. of water
- 1/2 tsp of ground turmeric
- Other ingredients:
- 2 Tbsp. of cooking oil
- 1 Tbsp. of mustard seeds
- 3 lb of chicken, boneless, skinless, cut into bite-sized pieces
- 3 large potatoes, peeled and cut into pieces
- 2 cups of chicken stock
- Salt to taste
- 2 Tbsp. of white vinegar
Banana Cream Pie

Pour milk into medium bowl
- 3 cups cold milk
- 2 - pkgs (4 serv size) Jell-O Vanilla Flavor Instant Pudding & Pie Filling
- 2 medium bananas
- 1 - 9 " baked pastry shell, cooled
- 1 - 8 oz tub Cool Whip, thawed
Meatballs with Creamy Noodles

Cook noodles according to pkg directions, but do not add salt
- Sauce:
- 8 oz no-yolk egg noodles
- 1 lb ground chicken
- 1/2 cup bread crumbs
- 1 lg egg, lightly beaten
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 clove garlic, minced
- 1-1/2 cups sliced mushrooms
- 1/2 cup chopped yellow onion
- 1 cup reduced-sodium chicken broth
- 1 cup nonfat sour cream
- 1 tsp paprika
- 2 Tbsp chopped fresh parsley
Blueberry-Peach Cobbler

- Topping:
- 1/4 cup firmly packed light brown sugar
- 2 Tbsp fresh lemon juice
- 2 Tbsp cornstarch
- 1/2 tsp ground cinnamon
- 4 large peaches, peeled and sliced (about 3-3/4 cups)
- 1 pint fresh blueberries
- 3/4 cup all-purpose flour
- 3-1/2 Tbsp granulated sugar
- 1/2 tsp baking soda
- 1 Tbsp cold unsalted butter, cut into small pieces
- 1/4 cup plain nonfat yogurt
- 2 Tbsp cold water

Heart Smart Sloppy Joes

In a large nonstick skillet, heat the oil over medium heat
- 1-2 tsp canola oil
- 1 lb ground turkey breast
- 1/3 C diced onion
- 1/3 C diced green pepper
- 1/3 C diced celery
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp celery seeds
- 1/4 tsp black pepper
- 3 Tbsp brown sugar or Splenda/brown sugar mix

- 1 Tbsp cider vinegar

- 1 can (6 oz) tomato paste
- 1 C water
- 6 fist-sized baked potatoes (optional)

- 2 slices Canadian bacon or lean ham (~ 2oz), diced

- 4 oz pepper-jack cheese, shredded
- 2 cups baby arugula, roughly chopped
- 2 lg skinless, boneless chicken breasts (12oz each)
