Chicken and Rice Oriental

Place rice and vegetables in a 9 x 13 inch pan
- 9 cups chicken broth
- 4 chicken breasts, cooked and shredded
- 3 cups long grain rice, uncooked
- 1 cup celery, chopped
- 1 green pepper, chopped
- 2 envelopes Lipton Chicken Soup Mix w/noodles
- 2 cups salted cashews
Cheesy Ham Macaroni

Cook the macaroni according to package directions
- 1 package elbow macaroni (8 oz. size)
- 6 Tb. butter, divided
- 1/4 cup flour
- 1/2 tsp. salt
- dash of black pepper
- 2 cups milk
- 2 cups sharp cheddar cheese, shredded
- 2 cups fully cooked ham, cubed
- 1 can mushroom stems & pieces, drained (4 oz. size)
- 1/2 cup crushed Ritz Crackers
Chocolate Peanut Butter Cookies

Preheat the oven to 350 degrees
- 1 1/2 Cup All-Purpose flour
- 1/2 Cup cocoa powder, natural or Dutch process
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 Cup granulated sugar (white)
- 1/2 Cup brown sugar (packed)
- 1/2 Cup butter, softened
- 1/4 Cup creamy peanut butter
- 1 tsp. vanilla
- 1 large egg
- 2 Tablespoons water
- 1 1/2 Cups mini-peanut butter cups
Chocolate Mousse Dessert

Begin with the CRUST by mixing the flour, nuts and butter with a pastry blender or a fork
- CRUST:
- 1 cup flour
- 1 cup finely chopped pecans or walnuts
- 1/2 cup butter
- FILLING:
- 1 package cream cheese (8 oz. size) softened
- 1 cup powdered sugar
- 1 package chocolate instant pudding (3 oz. size)
- 1 package vanilla instant pudding (3 oz. size)
- 3 cups milk
- 1 large tub of Cool Whip
- 1 chocolate bar, for grating
Pumpkin Bars

2 cups flour 2 tsp. baking powder 2 tsp
- 2 cups flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 4 eggs, beaten
- 1 can of pumpkin (16 oz. size) NOT pumpkin pie mix
- 1 1/2 cup sugar
- 1 cup vegetable oil
Cheesy Potato Soup

Great with breadsticks...or in sour dough bread bowls
- 1/2 cup onion chopped very fine
- 1 cube of butter
- 1/2 cup flour
- 2 Tb. cornstarch
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1 tsp. Mrs. Dash or to taste
- 1 can Evaporated Milk
- 6 cups chicken stock
- 3/4 cup carrots chopped VERY fine or shredded
- 3/4 cup celery chopped VERY fine or shredded
- 1 1/2 cup sharp cheddar cheese, grated
- 5 boiled potatoes, grated

- 1 package (4 serving size) Berry Blue flavored Jello
- 3/4 cup boiling water
- 1/2 cup cold water
- ice cubes
- gummy fish
Chicken Haystacks

In a large sauce pan, mix the cream of chicken soup, milk, broth and boullion
- CHICKEN GRAVY:
- 3 cups chicken, shredded
- 2 cans cream of chicken soup
- 1 can evaporated milk
- 1 can chicken broth
- 2 tsp. chicken boullion, with herbs
- 1 cup sour cream
- 1 tsp. tyme
- 1 tsp. basil
- Cooked white rice
- POSSIBLE TOPPINGS:
- coconut
- green onions
- pineapple
- boiled and chopped egg
- chopped celery
- peanuts or cashews
- chow mein noodles
- tomatoes, chopped
Pie Crust

- 4 cups flour
- 1 Tb. sugar
- 2 tsp. salt
- 1 3/4 cup butter flavor shortening
- 1/2 cup ice water
- 1 egg
- 1 Tb. vinegar
