Ingredients

  • 1 1/2 Cup All-Purpose flour
  • 1/2 Cup cocoa powder, natural or Dutch process
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 Cup granulated sugar (white)
  • 1/2 Cup brown sugar (packed)
  • 1/2 Cup butter, softened
  • 1/4 Cup creamy peanut butter
  • 1 tsp. vanilla
  • 1 large egg
  • 2 Tablespoons water
  • 1 1/2 Cups mini-peanut butter cups

Preparation

Step 1

Preheat the oven to 350 degrees. Lightly grease or line with parchment , two baking sheets. (I used non-stick pans, so I didn't worry about this step.
In a medium sized bowl, whisk together the flour, cocoa, baking soda and salt. Set aside.
In large mixing bowl, heath together the sugars, butter and peanut butter until light and fluffy. Beat in the vanilla, egg and water, then stir in the dry ingredients, blending well. Stir in the peanut butter cups.
Scoop rounded Tablespoons of dough onto the prepared baking sheets. Flatten each cookie to about 1/2 inch thick. Bake the cookies for 8-10 minutes, until they're set and you can smell chocolate. Remove them from the oven and cool on a rack.

Option: If you don't have Mini-peanut butter cups, you chop up the larger sizes of peanut butter cups. OR you can just use milk chocolate chips instead.
