Chocolate Covered Marshmallow Cookies

Stir together the flour, salt, baking soda and cocoa powder; set aside
- INGREDIENTS
- CHOCOLATE FROSTING:
- 1 3/4 cups flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 cup cocoa powder
- 1/2 cup shortening
- 1 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1/4 cup milk
- 18 large marshmallows, cut in half
- 36 pecan halves
- 2 cups powdered sugar
- 5 Tb. cocoa powder
- 1/8 tsp. salt
- 3 Tb. butter, softened
- 4-5 Tb. light whipping cream

- PREPARATION
- STEP 1
- Stir together the flour, salt, baking soda and cocoa powder; set aside. In a large bowl, cream shortening and sugar together. Add the egg, vanilla and milk. Add the dry ingredients a little at a time and mix well. Drop by heaping spoonfuls onto a GREASED cookie sheet (I usually spray the sheet with Pam). Bake for 8 minutes in a 350 degree oven. Do not over bake. Remove the cookies from the oven and top each cookie with a marshmallow half; return to oven for 3 more minutes. Remove from the oven and remove the cookies to a cooling rack. Frost with chocolate frosting, then top each frosted cookie with a pecan half.
Chicken Pie Casserole

This chicken pie is actually upside down
- CRUST:
- 1/2 cup butter, soft but not melted
- 1 cup sour cream
- 1 egg
- 1 cup flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. sage
- 3/4 cup cheddar cheese, shredded
- FILLING:
- 1/2 cup grated carrots
- 1/2 cup onion, finely chopped
- 1/2 celery, finely chopped
- 1/2 green pepper, finely chopped
- 1 Tb. butter, melted
- 2 cups chicken, cooked and cut into small chunks
- 2 cans cream of chicken soup
- 1 cup cheddar cheese, shredded
Thanksgiving Stuffing

LuAnn's sausage stuffing! We love this!
- 1 large package Pepperidge Farm Bread Crumbs with sage
- 1 large package Pepperidge Farm Bread Cubes
- 1 small onion, diced fine
- 4 stalks celery, sliced into moons
- 2 regular size cans of chicken broth
- 1 egg
- 1 cube butter
- 1 package of Jimmy Dean Sausage with sage
- sage to taste (only if not using the sage flavored sausage)
White Sangria

1. In a large pitcher or other container, combine the wine and sugar
- 6 cups Chardonnay or Sauvignon Blanc
- 1/4 cup superfine sugar
- 1 cup white grape juice
- 1 ripe nectarine, pitted and cut into thin wedges
- 1 tangerine, thinly sliced
- 1 cup seedless white grapes, halved
- 1 cup club soda

- PIE CRUST:
- 9-10 graham crackers
- 1/4 cup butter, melted
- FILLING:
- 12 oz. cream cheese
- 2 eggs
- 3/4 cup sugar
- 2 tsp. vanilla
- TOPPING:
- 1 carton sour cream (8 oz. size)
- 3 Tb. sugar
- 1 tsp. vanilla
No-Bake Chocolate Oatmeal Cookies

These cookies are great for when you are in a hurry for a fresh made cookie and they taste great
- 2 cups sugar
- 1/4 cup cocoa powder
- 1/2 cup milk
- 1/2 cup butter
- 1/2 cup peanut butter, I like to use chunky
- 1 tsp. vanilla
- 3 cups quick cooking oatmeal
Salsa

Combine all ingredients and keep in the fridge
- 1 can tomato sauce (8 oz. size)
- 1 can chopped tomatoes (28 oz. size)
- 1 can chopped green chilis
- 3 cloves garlic, chopped
- 2 large tomatoes, diced
- 1 small onion, diced
- 4 green onions, diced
- 1 Tb. sugar
- 1 tsp. oregano
- 2 Tb. fresh cilantro, but you can use dried also
- Salt to taste
- Dried chili pepper to taste
Crazy Chocolate Cake

Best chocolate cake I've ever made! Always turns out!
- 3 cups flour
- 2 cups sugar
- 6 Tb. cocoa powder
- 2 tsp. baking soda
- 1 tsp. salt
- 2/3 cup vegetable oil
- 2 Tb. vinegar (I use white vinegar)
- 2 tsp. vanilla
- 2 cups cold water
- 1 egg
Raddish/Dill Dip

This is a wonderful tasting dip to be used with vegetables
- 1 pkg. Dry Ranch dressing mix (NOT the dip mix)
- 1 cup mayonaise
- 1 cup sour cream
- 1 1/2 tsp. dill weed
- 8-10 red radishes, chopped fine
- 1 small onion, chopped fine
- 10 small baby carrots, chopped fine
Buffalo Chicken Dip

Put all ingredients into crockpot and heat until all cheese are melted and it's heated all the way through
- 2 cans chunk chicken, drained (10 oz. size cans)
- 2 package cream cheese (8 oz. size)
- 1 cup prepared ranch dressing
- 3/4 cup Franks Red Hot Buffalo Sauce
- 1 1/2 cup shredded cheddar cheese
- Put all ingredients into crockpot and heat until all cheese are melted and it's heated all the way through. Serve with chips.
