Onion Rings

Cut onions about 1/4 inch thick
- 2 large sweet yellow onions
- 3 cups buttermilk
- 2 eggs
- 3 Tb. water
- 1 3/4 cups flour
- 2 tsp. salt
- 2 tsp. chili powder
- 1-2 tsp. cayenne pepper
- 1 tsp. sugar
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- Vegetable oil for frying
Chicken Salad

Mix together the mayonnaise, curry powder, soy sauce and lemon juice
- 1/2 cup mayonaise
- 1/2 tsp. curry powder
- 1/2 tsp. soy sauce
- 1 1/2 tsp. fresh lemon juice
- 2 cups cooked chicken, white meat, cubed
- 1 cup thin celery sliced in thin crescents
- 1 cup seedless grapes, halved
- 1/2 cup slivered almonds, toasted
Sugar Cookies

Mix shortening, sugar, eggs and vanilla
- 1 cup butter flavor shortening
- 2 cups white sugar
- 2 eggs
- 2 tsp. vanilla
- 1 cup sour cream
- 6 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
Rocky Road Fudge

Put small marshmallows in a freezable container and freeze for at least an hour
- 2 milk chocolate candy bars, 7 oz. each
- 1/2 lb. butter
- 4 cups sugar
- 1 1/2 cup evaporated milk
- 2 cups chopped walnuts
- 25 large marshmallows
- 1 tsp. vanilla
- 60 small marshmallows, that have been frozen
- Put small marshmallows in a freezable container and freeze for at least an hour. In a separate bowl, cut up chocolate bars and utter into small chunks; set aside.

Mexican Tator Tot

A Mexican twist on the Tator Tot casserole
- 1 lb. Hamburger
- 1 package Taco Season
- 1 can corn, drained
- 1 can diced tomatoes
- 1 can black olives, drained and sliced
- 1 bag Tator Tots
- 3 Cups cheddar/jack cheese, shredded
Greek Salad

A twist on a traditional Greek Salad
- DRESSING:
- 8 cups salad mix
- 1 cucumber sliced
- 1/2 cup sliced red onion
- 8 oz. Feta cheese
- 2 plum tomatoes, slice in chunks (or any other tomato)
- 4 oz. kalamata olives
- 1/4 cup red wine vinegar
- 1/8 cup white wine vinegar
- 1 tsp. Dijon mustard
- 1 tsp. salt or to taste
- 1/2 tsp. black pepper
- A couple of dashes of cayenne pepper
- 1 small garlic clove or 1 1/2 tsp. minced, bottled garlic
- 1/3 C. extra virgin olive oil
- 1/2 canola oil
- 1 Tb. fresh or dried oregano or dried italian seasoning

1.Preheat oven to 400 degrees
- 1 cup water
- 6 Tb. butter
- 1/4 tsp. salt
- 1 cup flour

Egg Rolls

In a large skillet, cook the sausage until it is no longer pink
- 1 package Jimmy Dean sausage (I like the one with sage)
- 2 bags of cole slaw mix
- 3 Tb. fresh ginger, grated (you can use dried ginger is you don't have the fresh ginger
- 3 Tb. fresh garlic, finely chopped
- 1 Tb. black pepper
- 1 tsp. salt
- 1 package of egg roll wrappers

Tator Tot Casserole

Brown the hamburger and drain well, set aside
- 2 lbs. hamburger
- 1 bag tator tots
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 package, small, of frozen peas
- 2 cups shredded cheddar cheese
- 1 1/2 cans of water
Wild Rice Soup

In a large pot, melt the butter and add the onion
- 1 medium size onion, dice very fine
- 3-4 carrots chopped very fine
- 3-4 stalks celery, chopped very fine
- 1 stick butter
- 1 cup flour
- 4 cups chicken broth
- 4 cups heavy cream
- 3 cups cooked wild rice (sometimes I only use 2)
- 2 cups cooked ham, chopped small
