Peanut Butter Bars

If you like peanut butter and chocolate together, then these bar cookies are for you!
- 3/4 cup butter
- 3/4 cup peanut butter, (I usually use chunky)
- 3/4 cup white sugar
- 3/4 cup brown sugar, packed
- 2 eggs
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 tsp. vanilla
- 1 1/2 cup flour
- 1 1/2 cup oatmeal
Classic New York Style Cheesecake

Best baked Cheesecake I've ever tried at home!
- 4 packages of cream cheese (8 oz. each) total of 32 oz.
- 3 large eggs
- 2 1/4 Cups finely crushed graham crackers
- 1 T. white sugar
- 1/2 tsp. ground cinnamon (optional, but totally worth it)
- 2/3 Cup butter, melted
- 1 1/2 cups white sugar
- 1/4 Cup all purpose flour
- 4 tsp. vanilla, divided 3 tsp and 1 tsp.
- 2 cartons of sour cream (8 oz. each)
- 1/4 Cup white sugar
Chocolate Chip Zucchini Bread

Preheat oven to 350 degrees
- 3 cups flour
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking soda
- 3 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 2 tsp. vanilla extract
- 2 cups grated zucchini
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1 Tablespoon orange zest
Caramel Chocolate Squares

This bar recipe will take care of any chocolate/caramel craving you have!
- 1 bag of caramels, unwrapped
- 1 can evaporated milk
- 1 box of German Chocolate Cake Mix
- 1 cup flaked cocoanut
- 2/3 cup butter, melted
- 3/4 cup chopped pecans or walnuts
- 1 package mini semi-sweet chocolate chips (6 oz. size)

- 1 can sliced water chestnuts
- 1/2 Cup slivered almonds
- 1 Cup Peppridge Farm Bread Crumbs or herb flavored stuffing.

White Mountain Cream Frosting

- 1 cup white sugar
- 1/3 cup water
- 1/8 tsp. cream of tarter
- 1/2 tsp. salt
- 2 egg whites
- 1 tsp. vanilla
Granola

Preheat oven to 300 degrees
- 10 cups old fashioned oats
- 1 cup wheat germ
- 1/2 lb. shredded coconut
- 2 cups shelled sunflower seeds
- 1 cup almonds, slivered
- 1 cup pecans, roughly chopped
- 1 cup walnuts, roughly chopped
- 1 1/2 cup brown sugar, firmly packed
- 1 1/2 cup water
- 1 1/2 cup vegetable oil
- 1/2 cup honey
- 1/2 cup molasses
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 3 tsp. vanilla flavoring or almond flavoring
- Raisins or other dried fruit to taste
Chicken Divan

Boil the chicken and chop into small chunks
- 1 large bag of frozen broccoli florets
- 3 cups of cooked chicken, cut into small chunks
- 2 cans cream of chicken soup
- 1 cup mayonaise (NOT Miracle Whip)
- 1 1/2 cups croutons, or French's Fried Onions
- 1 cup milk
- 2 cups shredded monteray/jack cheese

- 2 cans chili beans
- 1 jar salsa (16 oz. size)
- 1 can kidney beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 can diced tomatoes, un-drained
- 1 cam cream of mushroom soup, undiluted
- 1 can tomato sauce (8 oz. size)
- 1 package Velveta, (8 oz size) cubed
- 1 1/2 tsp. chili powder
- 1/2 tsp. cayenne pepper (more if you wish spicier)
Chicken Enchilada Lasagna

Heat oven to 375 degrees. SPRAY a 13x9 inch glass baking dish with cooking spray
- 1 can (10 oz.) Eld el Paso enchilada sauce
- 2 cups chopped plum (Roma) tomatoes (about 4 medium)
- 2 cups cubed, cooked chicken
- 8 medium green onions, finely chopped (1/2 cup)
- 1 can (15 oz.) black beans, drained, rinsed
- 1 cup Southwest Ranch Veggie Dip (from a 16 oz. container)
- 8 corn tortillas, cut in half
- 1 1/2 cups shredded Mexican cheese blend
- 1/4 cup sliced ripe olives
- 2 Tablespoons chopped fresh cilantro (optional)
