Left-Over Turkey Casserole

Place half of the turkey on bottom of a 9 x 13 inch baking dish
- Left over turkey, cut in pieces. Amount is up to you
- 1 box stove top stuffing
- 1 can vegetables, drained
- 3 carrots cut in thin slices
- 2 packages chicken gravy mix, prepared
- 1 Cup shredded cheddar cheese
Mint Thins

Cookies made out of crackers
- 1 package, Bakers 8 oz. size, semi-sweet chocolate
- 1/4 tsp. peppermint extract
- 1 sleeve of Ritz Crackers (about 35 crackers)
- 1 peppermint candy cane, crushed into pieces (optional)
- (if using candy cane, the kind with the red, green and white colors makes the best presentation)
Zucchini Bread

Preheat oven to 350 degrees
- 3 1/4 cups flour
- 1 1/2 tsp. salt
- 1 tsp. nutmeg
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1/3 cup water
- 2 cups grated zucchini
- 1 tsp. lemon juice
- 1 cup chopped walnuts or pecans

Peanut Brittle

1. Heat the oven to 200 degrees
- 1 1/2 tsp. baking soda
- 1 tsp. water
- 1 tsp. vanilla
- 1 1/2 cup white sugar
- 1 cup water
- 1 cup light corn syrup
- 3 Tb. butter
- 1 lb. roasted/salted peanuts

Mix sure, salt, cinnamon, ginger and cloves in a small bowl, set aside
- 3/4 cup white sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 2 large eggs
- 1 can pumpkin, 15 oz. size. I like to use Libbys
- 1 can evaporated milk, 12 oz. size
- 1 unbaked pie crust for a 9 inch pie. I make my own
Great White Chili

Heat olive oil in large soup pot
- 5 cans White Northern Beans, drained (I like Bush's brand)
- 3 cups monteray jack cheese, shredded
- 3-4 boneless chicken breasts, cooked and shredded
- 1 Tb. olive oil
- 1 medium onion, diced very fine
- 5 tsp. minced, bottled garlic or 4 garlic cloves diced
- 2 cans mid chopped green chilis (4 oz. size cans)
- 2 tsp. cumin
- 1/4 tsp. cayenne pepper
- 1 1/2 tsp. oregano
- 1 tsp. Mrs. Dash
- 6 cups chicken stock
Harvest Beef Stew

A spicy fun stew with lots of fun vegetables
- 2 lbs. beef stew meat
- 1 cup flour
- dried pepper flakes, to taste
- 1 cube of butter
- 1 tsp. dried basil
- 1 tsp. salt
- 4 medium carrots cut into 1 inch chuncks
- 4 cloves garlic, finely chopped
- 2 med. onions, chopped fine
- 2 can's tomatoes (16 oz. size) w/the tomatoes broken up;
- you can also choose to use diced tomates
- 1 package frozen corn
- 8 small red potatoes (about 1 lb.) and cut in half or quarters
- 2 small zucchini, sliced in chunks
- salt to taste
No-Bake Cornflake Cookies

Mix corn syrup and sugar in a large saucepan; bring to a boil, stirring frequently, and let it boil for 1 minute
- 1/2 cup corn syrup
- 1/2 cup white sugar
- 1/2 cup peanut butter, chunky is best
- 1/2 tsp. vanilla
- 3 cups Corn Flake Cereal

- 1/2 cup butter
- 2/3 cup peanut butter
- 1 1/2 cup brown sugar
- 1/4 tsp salt
- 1/2 Tb. vanilla
- 3 large eggs
- 2 Tb. milk
- 1/2 Tb. baking powder
- 1 1/4 cup flour
- 1/2 cup chocolate syrup
- 1 cup sugar
- 1/2 cup cocoa
- 1/8 tsp. salt
- 1/2 cup HOT water
- 2 Tb. butter 1 tsp. vanilla
