Scooped Out Cupcake Tarts

Directions Preheat the oven to 350 degrees F
- 3 cups cake flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 3 sticks butter, room temperature
- 2 1/3 cups sugar
- 3 large egg whites
- 2 teaspoons vanilla extract
- 1 1/2 cups buttermilk, room temperature
- Sweetened whipped cream, for topping
- Seasonal fruit, for topping
- Mint sprigs, for garnish
Beef Ravioli in Basil Cream Sauce

Prepare raviolo in large dutch oven according to package directions drain and keep warm
- 1-24 oz pkg frozen beef ravioli
- 2 T butter
- 1-8 oz package slided fresh mushrooms
- 3 green onions chopped
- 2 garlic cloves chopped
- 1 t dried italian seasoning
- 1-10oz can diced mild tomatoes and green chiles drained
- 2 T chopped basil
- 1 c. whipping cream
- 1/2 c. grated parmesan cheese
- 1/2 t salt
Chile-Cheese Corn Muffins

Makes 6; prep is 15 minutes; Bake 25 minutes
- 2 1/3 cups flower
- 1 tablespoon plus 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 3/4 one cup frozen corn. thawed
- One 4 ounce can diced mild green chiles, drained
- 1/2 cup plus 1 tablespoon grated parmesan cheese
- 1 cup milk
- 1/2 cup mayonnaise
Taco Cheesecake

- 1 cup crushed tortilla chips (not necessary- don't use for strict low carb)
- 1 T melted butter
- 1 lb. ground meat
- 1 envelope taco seasoning
- 2 T water
- 16 oz cream cheese
- 2 large eggs
- 2 C shredded cheddar cheese
- 8 oz. sour cream
- 2 T flour
- Toppings: Shredded/ Chopped lettuce, tomatoes, green pepper

- 1 unbaked regular or deep dish 9-inch pie shell
- 2 cups sliced peaches

- 2 medium onions chopped
- 2 medium bell peppers chopped
- 2 ribs celery chopped
- 2 cloves garlic minced
- 1 stick butter
- 2 cans rotel
- 2 cans mushroom soup
- 1/2 c. water
- 2 t worcestershire
- salt and pepper to taste
- 2 pds crawfish tails
- 1 t leamon juice
- 2 T kithcen bouquet

Directions In a large bowl, combine the celery, chicken, eggs, almonds, scallions, mayonnaise, lemon juice,grapes,
- 1 celery rib, diced
- 2 cups diced cooked chicken
- 2 large hard cooked eggs, peeled and chopped
- 1/2 cup chopped almonds, toasted
- 1/4 cup sliced scallions, white and light green parts
- 1/2 cup mayonnaise
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 cups (about 3 ounces) Boston lettuce, for serving
- Grapes to taste cut in half

- 1 c. Parmesan, plus more for sprinkling
