In a large skillet, saute onions and garlic in olive oil over medium heat until opaque

- 1-1 1/2 T chili powder
- 1/2 t cumin powder
- 1 can (15 oz) red kidney beans, mashed with the juice
- 2-3 T red wine (optional)
- s/p to taste
- 3/4 C grated cheddar cheese
- 1/2 C sliced green olives, with pimiento

Heat the 2 tablespoons of olive oil in a large skillet over moderate heat
- 2 Tbs olive oil
- 1 1/2 lbs (750 g) ground lamb or beef
- 1/2 cup (125 ml) chopped onion
- 1/2 cup (125 ml) white wine or water
- 3 Tbs (45 ml) tomato paste
- 2 Tbs (30 ml) chopped parsley
- Salt and freshly ground black pepper to taste
- 3 lbs (1.5 Kg) eggplant (aubergine)
- 4 to 6 Tbs (60 to 90 ml) olive oil
- 1 recipe Bechamel sauce (see below)
- 1 cup (250 ml) bread crumbs
- 1/2 cup (125 ml) grated Parmesan cheese
- 3 Tbs (45 ml) melted butter
- Bechamel Sauce
- 6 Tbs (90 ml) butter
- 8 Tbs (120 ml) flour
- 4 cups (1 L) milk
- Salt and white pepper to taste
- A grating of fresh nutmeg

Make tomato sauce using first 6 ingredients
- 1 tb. Olive oil
- 1/8 tsp. crushed red pepper
- 2 garlic cloves, finely chopped
- 1 onion chopped
- 1 can (14 1/2 oz) diced tomatoes
- 2 tsps. basil
- 8 c. water
- 6 Knorrs chicken bouillon cubes (Knorrs cubes are double cubes)
- 2 large potatoes, large cubes
- 1 large potato, cut into large chunks to be pureed later with other veggies
- 2-3 carrots, 1” pieces
- 2 celery stalks, 1” pieces
- 1 tsp. oregano
- 1/2 head cabbage, cut into 1 1/2” pieces
- 8 oz. can mushrooms, stems and pieces
- 1/2 c. cooked barley

- 2 lb Pollyo Whole Milk Mozzarella grated using Cuisinart shredding disk
- 1 C Parmesan (parmigiano reggiano)
- 1 lb Ground Sirloin
- 2 1/2 lb Italian Sausage, removed from casing and crumbled
- 6 28 oz Cans Italian Plum Tomatoes – Progresso
- 1 T Salt
- 1 t Pepper
- 3 t Basil
- Few Bay Leaves

Beer-Turkey Chili

In a Dutch oven cook turkey or chicken, sweet pepper, onion, and garlic in hot oil until turkey is browned
- 1 lb. turkey breast tenderloin or skinless, boneless chicken breasts or thighs, cut into bite-size strips or cubes
- 1 cup chopped green sweet pepper
- 1 cup chopped onion
- 1 tsp. bottled minced garlic
- 2 Tbsp. cooking oil
- 2 28-oz. cans diced tomatoes, undrained
- 2 15-oz. cans black beans or Great Northern beans, rinsed and drained
- 1 12-oz. can beer
- 2 Tbsp. red wine vinegar
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1 tsp. dried oregano, crushed
- 1 tsp. ground cumin
- 1/4 tsp. ground black pepper
- 1/4 tsp. bottled hot pepper sauce
- 1 cup shredded Monterey Jack or cheddar cheese (4 ounces)
Mexican Bean Dip

- 1 pkg Old El Paso Taco Seasoning
- 1 16 oz container of Low fat or No Fat Sour cream
- 1 pkg low fat shredded cheddar or Mexican cheese
- 1 small can of green chiles
- 1 can of refried beans
- 1 small tomato chopped
- 1 onion chopped
- 1 car of salsa
- Tortilla chips to dip.
Beer Cheese

Whisk together the garlic, beer, Worcestershire sauce, hot sauce, mustard, salt, and pepper

- 1 Tbs (15 ml) Worcestershire sauce
- 1 tsp (5 ml) hot sauce, or to taste
- 1 tsp (5 ml) dry mustard
- Salt and freshly ground pepper to taste
- 1 lb (450 g) sharp cheddar cheese, grated
