- 2 cups (500 ml) water
- 1 Tbs (15 ml) vegetable oil
- 1 tsp (5 ml) salt
- 3 cups (750 ml) all-purpose flour
- 1 tsp (5 ml) baking powder
- 1/4 tsp (1 ml) vanilla extract
- Vegetable oil for deep frying
- Powdered (confectioner's) sugar for dusting

Make the filling: In the bowl of an electric mixer, beat the cream cheese and peanut butter together until combined
- 1/4 cup (2 ounces) cream cheese, softened
- 1 1/2 cups peanut butter (smooth, but you can use chunky if you are looking for more texture)
- 1 cup graham cracker crumbs (from about 14 graham crackers)
- 1/4 Salt (optional)
- 3 cups confectioners’ (powdered) sugar
- 10 tablespoons (1 1/4 sticks or 5 ounces) unsalted butter, melted and cooled
- 12 ounces dark chocolate (60 to 72%), coarsely chopped

Heat the oil in a large heavy pot (Dutch oven) over high heat
- 3 Tbs (45 ml) vegetable oil
- 2 lbs (900 g) beef stew meat cut into 1-inch (3 cm) pieces
- All-purpose flour for dredging
- 1 onion, thinly sliced
- 2 ribs celery, thinly sliced
- 1 carrot, thinly sliced
- 2 cups (500 ml) Guinness stout or other dark beer
- 1 Tbs (15 ml) tomato paste
- 2 tsp (10 ml) sugar
- 1 tsp (5 ml) English mustard powder
- A 1x3-inch (3x8 cm) piece of orange peel
- Salt and freshly ground pepper to taste
Beef and Sun Dried Tomato Stew

Soak the tomatoes in the warm water for 30 minutes
- 1 cup (250 ml) sun-dried tomatoes (not in oil)
- 2 cups (500 ml) warm water
- 1 1/2 lbs (675 g) beef stew meat, trimmed of excess fat
- 12 medium new potatoes, halved
- 1 medium onion, coarsely chopped
- 8 oz (225 g) baby-cut carrots
- 1 bay (laurel) leaf
- 1/2 tsp (2 ml) dried thyme
- 1/4 cup (60 ml) cold water
- 2 Tbs (30 ml) all-purpose flour
Double Decker Pumpkin Bread

1. Preheat oven to 350 degrees F
- 1/2 of an 8-ounce package cream cheese, softened
- 1/4 cup sugar
- 1 8-ounce carton dairy sour cream
- 1 egg
- 2 tablespoons finely chopped crystallized ginger
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 cups sugar
- 4 eggs
- 1 15-ounce can pumpkin
- 1 cup cooking oil
- 1/3 cup water
Asiago Dip with Crostini

Preheat oven to 350. Combine all ingredients but the bread, spoon into a 1 quart casserole
- 1 c mayonnaise*
- 1/2 cup finely chopped red onion
- 1/2 cup grated Asiago or Parmesan cheese
- ? cup finely chopped fresh mushrooms
- 8 oz sour cream*
- Loaf French bread
- 1/4 cup sun dried tomatoes, rehydrated and finely chopped
- * Light mayonnaise and sour cream work fine for this recipe, but not
- fat-free
Caesar Salad

Mix first 9 ingredients in a small food processor or blender
- Dash pepper
- 2 drops Tabasco
- 2 – 2 1/2 Garlic cloves minced
- 1/2 can Flat anchovies
- 1/4 C Wine Vinegar
- 1 T Worcestershire
- 1 T lemon juice
- 1 c olive oil
- 1 egg
- 3/4 c parmesan cheese
- 3 Romaine Hearts chopped
Pineapple and Black Bean Salsa (Salsa de Piña y Frijoles Negros)

Combine all ingredients in a serving bowl and toss to thoroughly combine
- 1 cup (250 ml) fresh or canned pineapple, chopped
- 1 cup (250 ml) canned black beans, rinsed and drained
- 1/2 cup (60 ml) fresh lime or lemon juice
- 1/2 cup (60 ml) chopped fresh cilantro
- 1 small red onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 1 - 2 cloves garlic, finely chopped
- 1 fresh jalapeño or other hot pepper, seeded and finely chopped
- Salt and freshly ground pepper to taste
