1-3 cloves garlic, finely chopped and mashed
1 cup (250 ml) beer
1 Tbs (15 ml) Worcestershire sauce
1 tsp (5 ml) hot sauce, or to taste
1 tsp (5 ml) dry mustard
Salt and freshly ground pepper to taste
1 lb (450 g) sharp cheddar cheese, grated
Whisk together the garlic, beer, Worcestershire sauce, hot sauce, mustard, salt, and pepper. Add the cheese 1 cup (250 ml) at a time and beat until smooth. Pack into a 2-cup bowl or crock, cover with plastic wrap, and refrigerate for at least 24 hours. Serve with crackers.
