Baked Chicken Parmesan

TIP: Give this kid-approved dish extra crunch by coating cutlets in Japanese-style panko bread crumbs
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 2/3 cup bread crumbs
- 1/4 cup grated Parmesan (1 ounce)
- 8 small chicken cutlets (1 1/2 pounds total)
- Kosher salt and black pepper
- 3 tablespoons olive oil
- 1 24-ounce jar marinara sauce
- 1 pound fresh mozzarella, sliced
Avocado Tomato Salad

Slice your avocado. To create pretty chunks, cut in a criss-cross design Then pop out the pieces
- 2 ripe avocados
- 2 large ripe beefsteak tomatoes
- 2 Tbsp fresh lemon juice
- 3 Tbsp. chopped cilantro
- salt and pepper to taste
Roasted Butternut Squash Coconut Curry Soup

This is a pureed soup and I have to admit, I am not always a fan of pureed soup
- 2 TBS Extra Virgin Olive Oil
- 16 oz Butternut Squash (I bought mine pre chopped at Costco, otherwise about 2 med whole squash)
- 2 Large Yellow Onions, chopped
- 1 large red/yellow pepper, or 2 small peppers
- 2 Jalapenos, diced with ribs and seeds removed
- 4 garlic cloves, diced
- 2 heaping tsp ginger
- 1 TBS coconut aminos (or liquid aminos/tamari/soy sauce)
- 1 TBS red curry paste
- 2 tsp Garam Masala
- 1 14 oz can Coconut Milk
- 2 Cups Chicken Stock
- Salt and Pepper to Taste
- Cilantro for garnish
Grapefruit, Salmon, and Avocado Salad | Martha Stewart

Preheat oven to 375 degrees F
- 2 skinless wild salmon fillets (about 5 oz. each)
- Coarse salt and freshly ground pepper
- 1 tablespoon EVOO, plus more for serving
- 2 scallions, trimmed and thinly sliced
- 1 Ruby Red grapefruit, segmented
- 1 avocado, halved, pitted, peeled and sliced
- 2 cups trimmed mixed tender greens, such as watercress and sunflower shoots
- Lime wedges for drizzling
Greek Chicken Pitas

Place onion and garlic in a slow cooker
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound skinless, boneless chicken breast halves - cut into strips
- 1 teaspoon lemon pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon allspice
- 1/4 cup plain yogurt
- 1/4 cup sour cream
- 1/2 cup cucumber, peeled and diced
- 4 pita bread rounds, cut in half
Teriyaki Chicken

Combine the soy sauce, brown sugar, oil, ginger, garlic powder and black pepper in a medium-size bowl
- 3 tablespoons soy sauce
- 2 tablespoons dark brown sugar
- 1 tablespoon corn oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 2 boneless chicken breast halves (about 10 oz.)
Potato Chowder

In soup pot, fry bacon until crisp
- 1/2 lb. bacon cut in cubes
- 2 large onions, chopped
- 1/2 green pepper, chopped
- 3 cups water
- 1/2 tsp. salt and pepper
- 1 cup half and half
- 1 can whole kernel corn, drained
- ground nutmeg
- 3 large potatoes peeled and cubed
Garlic Cauliflower "Mashed Potatoes"

Mexican Meatza

Preheat the oven to 400F. In a large bowl, mix the ground beef with the crust seasonings until combined
- Meat Crust:
- 1 pound ground beef
- 2 teaspoons chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 2 cloves garlic, crushed
- Toppings:
- 1/2 to 3/4 cup of your favorite salsa
- Green bell pepper, cut into thin strips
- Red onion, cut into thin strips
- Avocado, diced
- garnish: fresh lime, chopped fresh cilantro
