Chicken with Shallots

Preheat the oven to 425 degrees
- 4 boneless chicken breasts, skin on (6-8 oz. each)
- Kosher salt and freshly ground black pepper
- 3 tablespoons vegetable or canola oil
- 1/2 cup dry white wine
- 1/3 cup freshly squeezed lemon juice (3 lemons)
- 1/4 cup minced shallots (1 large)
- 3 tablespoons heavy cream
- 4 tablespoons (1/2 stick) unsalted butter, diced, at room temperature
Skillet Rosemary Chicken

Preheat the oven to 450. Cover the potatoes with cold water in a saucepan and salt the water
- 3/4 pound small red-skinned potatoes, halved, or quartered if large
- Kosher salt
- 2 sprigs fresh rosemary, plus 1 tablespoon leaves
- 1 clove garlic, smashed
- Pinch of red pepper flakes
- Juice of 2 lemons (squeezed halves reserved)
- 2 tablespoons extra-virgin olive oil
- 4 skin-on, bone-in chicken breasts (6 to 8 ounces each)
- 10 ounces cremini mushrooms, halved
Whole-Wheat Spaghetti with Lemon, Basil, and Salmon | Giada De Laurentiis

Bring a large pot of salted water to a boil over high heat
- 1/2 pound whole wheat spaghetti
- 1 garlic clove, minced
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon salt, plus more for seasoning
- 1/2 teaspoon freshly ground black pepper, plus more for seasoning
- 1 tablespoon olive oil
- 4 (4 oz) salmon fillets
- 1/4 cup chopped fresh basil leaves
- 3 tablespoons capers, rinsed and drained
- Zest of 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- 2 cups fresh baby spinish leaves
Spiked Watermelon Lemonade

- 4 cups lemonade, fresh squeezed, from a carton, or from concentrate
- 2 cups cubed watermelon
- 1 cup vodka or flavored vodka: raspberry, watermelon, citrus, vanilla

Watermelon Mojitos

- 30 large fresh mint leaves, coarsely torn by hand
- 3 to 4 thick slices fresh watermelon
- 12 oz. light rum, such as Bacardi
- 1/2 cup simple syrup (see note)
- 6 tablespoons freshly squeezed lime juice (3 limes)
- Sprigs of mint and spears of watermelon for serving
Shady Lady Pasta Puttanesca

- 8 oz. penne pasta
- 3 tablespoons olive oil
- 3 large garlic cloves, coarsely chopped
- 1/2 cup pitted black olives, chopped
- 1/2 cup red or white wine
- 2 tablespoons capers, drained (optional)
- Generous handful of chopped flat-leaf parsley
- 1 teaspoon crushed red pepper flakes
- 1 15 oz. can diced tomatoes, with juice
- Salt and pepper to taste
Five-Spice Roast Chicken

Marinate the chicken overnight, then pop it in the oven the next day
- 4 garlic cloves, pressed
- 2 tbsp. coarse kosher salt
- 2 tbsp. extra-virgin olive oil
- 1 tsp. Chinese five-spice powder
- 1 cut-up chicken (8 pieces, about 3 1/2 lbs.)
- 1 large onion, peeled, cut into 16 wedges
Hazelnut Crusted Salmon

Toast the hazelnuts over medium-high heat for about 3-4 minutes until they’re nice and golden
- 2 5oz Wild Salmon fillets
- 2-3 T chopped hazelnuts (I measured after they had been chopped)
- 1/4 cup clarified butter (mine is liquid at room temp. If yours isn’t – melt it!)
- 2 cloves garlic, minced
- 2 t fresh thyme leaves
- S&P to taste
Crispy Coconut Crab Cakes with Wasabi Avocado Sauce

1. Finely dice the red bell pepper and green onion
- For the Crab Cakes:
- 1 lb Lump Crabmeat drained
- 3 Green Onions Finely sliced
- 1/4 Cup Red Bell Pepper, diced
- 2 Egg Yolks
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Onion Powder
- 1/8 Cup Paleo Mayo
- a Dash of Red Pepper
- 1/8 Cup Blanched Almond Flour
- 1/8 Cup Unsweetened Shredded Coconut
- 1/4 Teaspoon Sea Salt
- 1/4 Teaspoon Black Pepper
- 2 Tablespoons Coconut Oil
- For the Sauce:
- 1 Avocado
- 1 Tablespoon Paleo Mayonnaise
- 2 Teaspoons Wasabi Paste (or more to taste)
- 1/3 Cup Water
- 1 Tablespoon Coconut Aminos
- 1 Tablespoon Rice Vinegar
- a Dash of Sea Salt
