- 4 English cut beef short ribs, trimmed (roughly 8 ounces each)
- Kosher salt and freshly cracked black pepper
- 3 tablespoons unsalted butter, divided
- 1 bottle full bodied red wine, such as Cabernet
- 4 cups low-sodium vegetable stock
- 4 cloves garlic, peeled and smashed
Cheesy Mixed Pasta Casserole with Mushrooms | Food & Wine

Step 1 In a heatproof glass measuring cup, cover dried porcini mushrooms with 1 cup of boiling water
- 1/2 cup dried porcini mushrooms (1/2 ounce)
- 1 pound mixed short pasta shapes such as fusilli, farfalle, penne, and orzo
- 6 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 3 cups milk
- 2 tablespoons heavy cream
- 1/2 pound shiitake mushroom, stems discarded and caps quartered
- 1/2 pound white button mushrooms, stems trimmed and caps quartered Kosher salt and freshly ground pepper
- 4 1/2 ounces fontina cheese, coarsely grated (1 cup plus 2 tablespoons)
- 1/2 cup finely grated Parmigiano-Reggiano cheese
Corn, Tomato, & Avocado Salad

Combine the dressing ingredients in a blender, using 2 teaspoons salt, and pepper to taste; process until smooth
- For the dressing:
- 1 1/2 cups packed fresh cilantro
- 1/2 cup good-quality extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon finely grated lime zest
- Kosher salt and freshly ground pepper
- For the salad:
- 4 ears corn, kernels removed (about 3 cups)
- 1 1/2 pounds grape tomatoes, halved (about 3 cups)
- 1 pound fresh mozzarella, diced
- 2 medium avocados, diced

- 6 oz Ronzoni Smart taste noodles (or no-yolk)
- 2 tsp oil
- 4 cloves garlic, sliced thin
- 12 oz fresh broccoli florets, chopped
- 1 tbsp butter
- 1 medium shallot, minced
- 3 tbsp all purpose flour
- 1-3/4 cups fat free chicken broth
- 1 cup 1% milk
- 12 oz cooked shredded chicken breast
- 4 oz shredded reduced fat sharp cheddar (Sargento)
- cooking spray
- 3 tbsp shredded parmesan cheese
- 2 tbsp seasoned breadcrumbs (I used whole wheat)
Spiced & Baked Sweet Potato Fries

It took me less than 10 minutes to wash, peel, cut and season these tasty tubers
- 1 tbsp olive oil
- 1 large clove garlic, pressed or minced
- 2-3 sweet potatoes, about 1 1/2 lbs
- 1/2 tsp sweet paprika
- 1/4 tsp cumin
- 1/4 tsp freshly cracked black pepper
- 1/4 tsp salt
- 1/8 tsp cinnamon
- 1/8 tsp ground ginger
- a few pinches cayenne

This innovative but easy recipe adds a new dimension to rack of lamb
- 2 racks of lamb, frenched (a single rack is 8 ribs)

- 1/3 cup chopped rosemary
- 1/3 cup chopped fresh thyme

Oven-Baked Sweet Potato 'Fries'

I preheated the oven to 375 F on convection bake (or 400 F in a non-convection oven)
- 2 large garnet yams
- 2 tablespoons of coconut oil, melted (I just nuke it in the microwave for ~30 seconds)
- Kosher salt
- Freshly ground pepper
- Smoked parika (or your favorite seasoning – cinnamon works well, too!)
