Mix all ingredients together
- 3/4 cup mayo
- 1/4 cup vinegar
- 1/4 sugar
- 2 tsp. celery seed
- salt and pepper
- 1 T. milk
- 1/2 cup chopped onion
Garlic Beef Enchiladas Recipe

In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain
- SAUCE:
- 1 pound ground beef
- 1 medium onion, chopped
- 2 tablespoons all-purpose flour
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon rubbed sage
- 1 can (14-1/2 ounces) stewed tomatoes
- 4 to 6 garlic cloves, minced
- 1/3 cup butter
- 1/2 cup all-purpose flour
- 1 can (14-1/2 ounces) beef broth
- 1 can (15 ounces) tomato sauce
- 1 to 2 tablespoons chili powder
- 1 to 2 teaspoons ground cumin
- 1 to 2 teaspoons rubbed sage
- 1/2 teaspoon salt
- 10 flour tortillas (6 inches), warmed
- 2 cups (8 ounces) shredded Colby-Monterey Jack cheese
Grilled Pork Tenderloins Recipe

1. In a large bowl, combine the first 10 ingredients
- 1/3 1/3 1/3 cup honey
- 1/3 1/3 1/3 cup reduced-sodium soy sauce
- 1/3 1/3 1/3 cup teriyaki sauce
- 3 3 3 tablespoons brown sugar
- 1 1 1 tablespoon minced fresh gingerroot
- 3 3 3 garlic cloves, minced
- 4 4 4 teaspoons ketchup
- 1/2 1/2 1/2 teaspoon onion powder
- 1/2 1/2 1/2 teaspoon ground cinnamon
- 1/4 1/4 1/4 teaspoon cayenne pepper
- 2 2 1 pork tenderloins (about 1 pound each)
- Hot cooked rice
- 8 and marinade in refrigerator. Grill as directed. Yield: 8 servings.
Quinoa With Sweet Peas and Sour Cream Dressing

Delicious, first made 3-2011
- 1/2 cup quinoa, rinsed
- 1/2 tsp and pinch salt
- 2/3 cups water
- 1/4 cup and 1 T. olive oil
- 1/3 cup yellow onion, diced
- 3/4 cup snap or snow peas, halved crosswise on the bias
- 3/4 cup shelled peas, fresh or frozen
- 2 T. sour cream
- 1/2 tsp. dijon mustard
- 1 T. champagne vinegar
- 1 T. lemon juice
- 1/2 tsp. sugar
- 1/3 cup fresh mint, torn (optional- I did not use)
- 1/4 cup parsley, chopped
The Best Cheesy Scalloped Potatoes

Seriously, these are the best cheesy scalloped potatoes, made with two types of cheese
- 4 tablespoons butter
- 1/2 cup chopped onion
- 1 teaspoon ground mustard
- 1 teaspoon. salt
- 1/2 teaspoon coarsely ground pepper
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1 (12-ounce) block sharp cheddar cheese,shredded and divided
- 1 (4-ounce) block Monterey Jack cheese, divided
- 3 pounds medium russet potatoes, peeled and thinly sliced
- 3/4 cup dry bread crumbs
Edamame Succotash with Shrimp

- 2 slices bacon
- 1 T. extra virgin olive oil
- 1 bunch scallions, sliced, or 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 1/2 tsp. chopped fresh thyme
- 1 10 oz. package frozen shelled edamame thawed
- 1 10 oz. package frozen corn(about 2 cups), thawed
- 1/2 cup reduced-sodium chicken broth or vegetable broth
- 1 T. cider vinegar
- 1/4 tsp. salt
- 1 pound raw shrimp (26-30 per pound), peeled and deveined
- 1/4 tsp. lemon pepper
Mashed Maple Squash

- 1 Acorn squash (1-1/4 pounds) halved and seeded
- 2 T. pure maple syrup
- 1 tsp. butter
- 1/4 tsp. ground cinnamon
- 1/4 tsp. salt

- 6 medium red potatoes, quartered
- 1/2 cup water
- 2 medium carrots, sliced
- 1 can (10-3/4) condensed cream of mushroom soup, undiluted
- 1/2 cup white wine or chicken broth
- 1-1/2 tsp. chicken granules
- 1 tsp. minced garlic
- 1/2 tsp dried parsley flakes
- 1/4 tsp. thyme
- 1/4 tsp pepper
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1/2 pound sliced fresh mushrooms
- 4 bacon strips, cooked and crumbled
- 1/3 cup chopped green onions

- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 cup water
- 1/2 cup quinoa, rinsed
- 4 large green peppers
- 3/4 pound lean ground beef (90% lean)
- 1 large onion, finely chopped
- 3 teaspoons dried parsley flakes
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 1/4 to 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon pepper
- 3 garlic cloves, minced
- 2 cans (8 ounces each) no-salt-added tomato sauce, divided
- 3/4 cup frozen corn, thawed
- 1/2 cup shredded reduced-fat cheddar cheese
