Beef with Red Wine Gravy Recipe

Place the beef, mushrooms and onion in a 5-qt
- 3 pounds beef stew meat, cut into 1-inch cubes
- 1 pound medium fresh mushrooms, halved
- 1 medium onion, sliced
- 1 can (10-1/2 ounces) condensed beef broth, undiluted
- 1 cup dry red wine
- 1 envelope brown gravy mix
- 2 tablespoons tomato paste
- 1/4 teaspoon salt
- 1 bay leaf
- 1/4 cup cornstarch
- 1/4 cup cold water
- Hot cooked egg noodles
Double Chocolate Gooey Butter Cake

Preheat oven to 350 degrees F
- Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted
- 1 (18.25 ounce) package chocolate cake mix
- 1 egg, plus 2 eggs
- 1 (8-ounce) package cream cheese, softened
- 3 to 4 tablespoons cocoa powder
- 1 (16-ounce) box powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
Gluten-Free Angel Food Cake Recipe

Place egg whites in a large bowl; let stand at room temperature for 30 minutes
- 1-1/2 cups egg whites (about 10)
- 3/4 cup plus 1/2 cup sugar, divided
- 1/4 cup cornstarch
- 1/4 cup white rice flour
- 1/4 cup tapioca flour
- 1/4 cup potato starch
- 1-1/2 teaspoons cream of tartar
- 3/4 teaspoon salt
- 3/4 teaspoon vanilla extract
- Assorted fresh fruit, optional
Holiday Lettuce Salad Recipe

In a salad bowl, combine the first five ingredients
- 10 cups torn romaine
- 2 medium red apples, cubed
- 2 medium pears, cubed
- 1 cup (4 ounces) shredded Swiss cheese
- 1/2 cup dried cranberries
- 6 tablespoons lemon juice
- 3 tablespoons canola oil
- 3 tablespoons light corn syrup
- 1-1/2 teaspoons grated onion
- 1-1/2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 cup chopped lightly salted cashews
Pear-Quinoa Salad

First made 11/20/2011. Another very good quinoa recipe
- 1 14-ounce can reduced-sodium chicken broth or vegetable broth
- 1 cup quinoa, rinsed if necessary
- 2 T. walnut oil or canola oil
- 1 T. fruity vinegar, such as pear, raspberry or pomegranate (I used white wine vinegar).
- 1/4 cup snipped fresh chives
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2 ripe but firm pears, diced
- 1/2 cup coarsely chopped walnuts or pecans, toasted
Chicken and Bean Burrito Verde

Heat 2 teaspoons of the oil in a medium skillet
- 4 teaspoons olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1/2 teaspoon ground cumin
- 1 15-ounce can of low-sodium white beans, rinsed and drained
- 1/2 cup low-sodium chicken broth
- 1/2 teaspoon, plus a pinch, of salt
- 2 cups lightly packed shredded romaine lettuce (about 3 large leaves)
- 1/3 cup fresh cilantro leaves
- 2 teaspoons fresh lime juice
- Freshly ground black pepper
- 4 whole wheat flour tortillas (about 9 inches in diameter)
- 2 cups shredded cooked chicken, skinless (a breast and thigh of a rotisserie chicken)
- 1 jalapeno finely diced
- 1/2 ripe avocado, thinly sliced
- 1/2 cup tomatillo salsa
- 1/2 cup low-fat Greek-style yogurt
Michael's Banana Coffee Muffins

First made 3/13,2016. Very good, moist, hint of coffee flavor
- 1/3 cup melted butter
- 4 ripe bananas, smashed
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons strong coffee
- 1 teaspoon baking soda
- Pinch salt
- 1 1/2 cups all-purpose flour
- 1 cup chopped pecans, toasted or raw
Guyere Potato Gratin

First made 5/2003. Very good
- 1 T. butter
- 1 cup half and half or light cream
- 1 1/4 tsp salt
- 1/4 tsp. ground red pepper (cayenne) can be omitted
- 2 pounds baking potatoes, peeled and thinly sliced (about 4 medium)
- 4 ounces Gruyere cheese, shredded (1 cup)
Wolf Chocolate Chip Cookies

This recipe came with my first Wolf oven in 2006
- 2 sticks plus 2 tsp. unsalted butter, room temperature
- 2 cups brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1-1/2 tsp. vanilla extract
- 2 tsp. strong brewed coffee
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1-1/2 tsp salt
- 3-1/2 cups flour
- 3 cups chocolate chips
Basic Ground Beef Tacos

- 1 to 1 1/2 pounds lean ground beef
- 1 cup chopped onion
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 cup chopped red or green bell pepper, optional
- 1/3 cup refried beans
- 1/2 cup mild taco sauce
- 8 to 12 taco shells
- 1 1/2 cups shredded mild Cheddar or Mexican blend cheese
- 1 head lettuce, shredded
- diced tomatoes
