Shrimp Dip

Combine the sour cream and cream cheese in a medium bowl, and beat at medium speed of a mixer until smooth
- 1/3 cup fat-free sour cream
- 1 (8 ounce) block fat-free cream cheese, softened
- 1/2 cup chopped celery
- 1/2 cup diced onion
- 2 TBSP fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. ground red pepper
- 2 (7-ounce) cans tiny shrimp, drained
Ginger Pork Loin

- 2 T. orange marmalade
- 2 T. fresh lemon juice
- 2 T. minced fresh gingerroot
- 2 tsp. minced garlic
- 2 tsp. Dijon mustard
- 2 tsp. low-sodium soy sauce
- 2 tsp. sesame oil
- 1 tsp. lemon zest
- 1 (3 to 4 pound) boneless pork loin, well trimmed

Smoky Cheddar Potatoes

Great summer recipe with grilled chicken or steak
- 4 medium potatoes, cut into 1-inch chunks (Use Yukon Gold potatoes).
- 1/2 tsp. salt
- 2 T. butter
- 1 cup shredded cheddar cheese (4 ounces)
- 2 T. Betty Crocker Bac-O's bacon flavor chips (optional can use chopped red bell pepper).
- 2 medium green onions, sliced ( 2 T)

In a small bowl, combine the oil, honey, 1 tablespoon vinegar, oregano and garlic powder
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 tablespoon plus 1/2 teaspoon balsamic vinegar, divided
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 pound fresh asparagus, trimmed
- 3 small carrots, cut in half lengthwise
- 1 large sweet red pepper, cut into 1-inch strips
- 1 medium yellow summer squash, cut into 1/2-inch slices
- 1 medium red onion, cut into four wedges
- 1/8 teaspoon pepper
- Dash salt

- 1 medium onion, sliced
- 1 cup buttermilk
- 1/2 cup sour cream
- 1 (1 ounce) envelope Ranch-style dressing mix
- 1/4 cup chopped fresh basil (optional)
- 1 clove garlic (mince before adding to blender)

- 5 tablespoons olive oil, divided
- 4 boneless skinless chicken breast halves (5 ounces each)
- 2/3 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 teaspoons cider vinegar
