Gnocchi with Zucchini Ribbons & Parsley Brown Butter

Bring a large saucepan of water to a boil
- 1 pound fresh or frozen gnocchi
- 2 tablespoons butter
- 2 medium shallots, chopped
- 1 pound zucchini, (about 3 small), very thinly sliced lengthwise (see Tip)
- 1 pint cherry tomatoes, halved
- 1/2 teaspoon salt
- 1/4 teaspoon grated nutmeg
- Freshly ground pepper, to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- Tip- to make "ribbon thin" zucchini, Slice lengthwise with vegetable peeler or mandoline slicer.
Apple Pie

Peel and cut up apples into bite size pieces
- 1 Pillsbury pie crust
- 8-10 Cortland apples
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup or less maple syrup
- 2 T. tapioca
- 1/2 -1 tsp. cinnamon
- Dash of nutmeg
- 2 T. Butter
- Milk
- Cinnamon sugar
Broccoli Salad Supreme Recipe

1. In a large salad bowl, combine the broccoli, grapes, celery and onions
- 10 cups broccoli florets (about 3-1/2 pounds)
- 6 cups seedless red grapes (about 3 pounds)
- 1 cup sliced celery
- 6 green onions, sliced
- 2 cups mayonnaise
- 2/3 cup sugar
- 2 tablespoons cider vinegar
- 1 pound sliced bacon, cooked and crumbled
- 1-1/3 cups slivered almonds, toasted
- 1 . In a large salad bowl, combine the broccoli, grapes, celery and onions. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over broccoli mixture and toss to coat.
- 2 . Cover and refrigerate for at least 4 hours or overnight. Just before serving, gently stir in bacon and almonds. Yield: about 20 servings.
Tuscan Pork Stew Recipe

In a large skillet, brown pork in oil until no longer pink; drain
- 1 boneless whole pork loin roast (1-1/2 pounds), cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
- 2 cups reduced-sodium chicken broth
- 2 cups frozen pepper stir-fry vegetable blend, thawed
- 1/2 cup dry red wine or additional reduced-sodium chicken broth
- 1/4 cup orange marmalade
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon fennel seed
- 1/2 teaspoon pepper
- 1/8 teaspoon crushed red pepper flakes, optional
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Hot cooked fettuccine, optional
Healthy Cauliflower Macaroni and Cheese

Preheat oven to 425. Bring a large pot of water to a boil and cook cauliflower for 2 minutes
- 1 Small Head Cauliflower, cut into 1 inch florets
- 1/2 Cup Whole Wheat Macaroni
- 2 Whole Cloves
- 1/2 Small Onion
- 2 Cups Nonfat Milk
- 1 Bay Leaf
- 2 Tbsp Unsalted Butter
- 2 Tbsp All-Purpose Flour
- 3/4 Cup Grated Gruyere Cheese, divided
- 2 Tsp Chives, chopped
- 1 Tsp Red Pepper Sauce
- 1 Tsp Grated Nutmeg
- Salt
- Freshly Ground Black Pepper
- Worcestershire Sauce
Chardonnay Cilantro Grilled Swordfish

Combine all ingredients in a large food storage bag
- 1 T. olive oil
- 2 T. freshly squeezed lime juice
- 1/2 cup Chardonnay wine
- 1 T. dry mustard
- 1 tsp. mustard seeds
- 1 T. chili powder ( I use less)
- 1 tsp. pepper
- 4 T. finely chopped fresh cilantro
- 1 pound swordfish steaks
Pork Chop Supper Recipe

Place flour in a large resealable plastic bag
- 1/2 cup all-purpose flour
- 6 bone-in pork loin chops (3/4 inch thick and 8 ounces each)
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 4 large potatoes (about 2-1/4 pounds)
- 5 medium carrots, sliced 1/4 inch thick
- 1 medium onion, cut into wedges
- 3 cups beef broth

Preparation 1. Preheat oven to 350°F
- 3/4 cup low-fat milk
- 2 large eggs
- 3/4 cup sugar
- 1/3 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini
- 2 cups white whole-wheat flour (see Note)
