  • 1/4 cup low-fat mayonnaise
  • 1 tsp. Dijon mustard
  • 5 T. finely chopped shallot, divided
  • 1 1/2 tsp. finely chopped fresh thyme, divided (I have used dried powder)
  • 1 pound ground chicken
  • 1/3 cup finely diced ham
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 4 slices Swiss cheese
  • 8 small slices pumpernickel bread or 4 large slices, cut in half, toasted
  • 12 large leaves spinach, tough stems removed

  • Dressing:
  • 1 head of cabbage and romaine lettuce, shredded
  • 1 package (5 oz.) slivered almonds
  • 3-4 T. sesame seeds
  • 2 packages Top Ramen chicken noodle soup ( do not cook)
  • 1 bunch green onions chopped
  • 1/4 cup olive oil
  • 1/4 cup water
  • 6 T. rice vinegar
  • 6 T. granulated sugar
  • 2 packages chicken seasoning (from noodle soup package)

  • 2 T. extra-virgin olive oil
  • 5 large shallots, peeled and chopped
  • 3 medium carrots, peeled and cut into 1/2 inch pieces
  • 1 large red bell pepper, cut into 1/2 inch pieces
  • 8 oz. ground white turkey meat (can substitute one cup of shredded cooked turkey)
  • 1 T. herbes de Provence
  • 5 cups low-sodium chicken broth
  • 1 (15 oz.) can diced tomatoes, drained
  • 1 cup cooked brown rice
  • 1 small bunch kale,center ribs removed, leaves coarsely chopped (about 4 packed cups)
  • 1 tsp. kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 freshly grated Parmesan

  • 2 tsp. baking powder

  • 1/4 cup water
  • Semisweet chocolate chips, dried cranberries, sliced ripe bananas and coarsely chopped pecans, optional.
