Chicken Cordon Bleu Burger

- 1/4 cup low-fat mayonnaise
- 1 tsp. Dijon mustard
- 5 T. finely chopped shallot, divided
- 1 1/2 tsp. finely chopped fresh thyme, divided (I have used dried powder)
- 1 pound ground chicken
- 1/3 cup finely diced ham
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 4 slices Swiss cheese
- 8 small slices pumpernickel bread or 4 large slices, cut in half, toasted
- 12 large leaves spinach, tough stems removed
Shredded French Dip Recipe

Halve roast and place in a 3-qt
- 1 boneless beef chuck roast (3 pounds), trimmed
- 1 can (10-1/2 ounces) condensed French onion soup, undiluted
- 1 can (10-1/2 ounces) condensed beef consomme, undiluted
- 1 can (10-1/2 ounces) condensed beef broth, undiluted
- 1 teaspoon beef bouillon granules
- 8 to 10 French or Italian rolls, split
Oriental Salad

Excellent; makes a lot. I use this often for summer barbecue parties
- Dressing:
- 1 head of cabbage and romaine lettuce, shredded
- 1 package (5 oz.) slivered almonds
- 3-4 T. sesame seeds
- 2 packages Top Ramen chicken noodle soup ( do not cook)
- 1 bunch green onions chopped
- 1/4 cup olive oil
- 1/4 cup water
- 6 T. rice vinegar
- 6 T. granulated sugar
- 2 packages chicken seasoning (from noodle soup package)
Oat Apple Crisp Recipe

Place apples in a greased 2-1/2 qt
- 7 cups thinly sliced peeled tart apples (about 7 medium)
- 1 cup sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground Spice Islands® Ground Saigon Cinnamon
- Dash salt
- 1/4 cup water
- 1 package (9 ounces) yellow cake mix
- 3/4 cup quick-cooking oats
- 1/3 cup butter, softened
- 1/4 cup packed brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- Vanilla ice cream
Never-Fail Scalloped Potatoes Recipe

In a small nonstick skillet, melt butter
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 cups fat-free milk
- 1/2 cup shredded reduced-fat cheddar cheese
- 1-3/4 pounds potatoes, peeled and thinly sliced (about 5 medium)
- 1 medium onion, halved and thinly sliced
Blueberry Corn Muffins

- 2 packages "JIFFY" Corn Muffin Mix
- 2 eggs
- 1 cup sour cream
- 1/2 cup apple juice
- 1 1/2 fresh or frozen blueberries
Giada's Second-Day Soup

First tried 12/12/2013. Excellent
- 2 T. extra-virgin olive oil
- 5 large shallots, peeled and chopped
- 3 medium carrots, peeled and cut into 1/2 inch pieces
- 1 large red bell pepper, cut into 1/2 inch pieces
- 8 oz. ground white turkey meat (can substitute one cup of shredded cooked turkey)
- 1 T. herbes de Provence
- 5 cups low-sodium chicken broth
- 1 (15 oz.) can diced tomatoes, drained
- 1 cup cooked brown rice
- 1 small bunch kale,center ribs removed, leaves coarsely chopped (about 4 packed cups)
- 1 tsp. kosher salt
- 1/2 tsp freshly ground black pepper
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 freshly grated Parmesan
Corn Dip

This recipe was handed down from an old neighbor, Dawne Litterst
- 3 (approximately 11 oz.)cans Mexi-Corn, drained
- 3 (4 oz.) cans chopped green chilies, drained
- 3-4 green onions, chopped
- 16 oz. grated cheddar cheese
- 3/4 cup Miracle Whip
- 8 oz. sour cream
Yogurt Pancakes

- 2 cups all purpose flour
- 2 T. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 eggs, lightly beaten
- 2 cups (16 ounces) plain yogurt
- 1/4 cup water
- Semisweet chocolate chips, dried cranberries, sliced ripe bananas and coarsely chopped pecans, optional.
